Gluten-free Peach Cobbler | Glutenfreewhisk
A popular recipe from the United Kingdom and making this and eating it was absolutely delightful. The buttery, peachy flavor with cold sweetness of flavored yogurt was just perfect. I have added a few extra spices and have cooked my peaches in loads of butter and have used ghee or clarified butter in the cake layer and the overall result is just rich and perfect.
This is my first take on peach cobbler, and I will change nothing except I will eat it with homemade salted caramel ice cream. Just the thought of this combination is making my mouth water, and I want to make both peach cobbler and salted caramel vanilla ice cream like now. I don't know why it took me so long to try peach cobbler recipe because it is very simple one to bake and an absolute delight. I even had my peach cobbler for breakfast. It was that good.
Peaches are rich in antioxidants, Vitamin A and C and are also a great source of potassium, they are juicy and fibrous thus making then great for your stomach. Sometime eating peaches can feel too tangy and in that case making peach cobbler is the best option because the tanginess helps in the recipe and make them perfect for baking. Summers are great when it comes to good fruits mangoes, mosambi, peaches, apricots, cherries, melon, watermelon and the list is long. So, make the most of peaches this summer season.
To make peach cobbler all you have to do is cook the peaches first so that they get soft and release all the extra juices. I have cooked my peaches with jaggery powder, cloves and cinnamon powder and this combination is insane with butter. Followed by a cake layer where I have added dried ginger powder and have used condensed milk to sweeten it. It is moist cake with a perfectly cooked peaches base. I tried to make some art on top with the cooked peaches liquid, and it works. So, you too can try it. The best part about this peach cobbler is it is egg-free and gluten-free.
I personally prefer egg-free cake because I don't like the smell of egg. It is not like I don't eat egg; I do occasionally but I love my cakes too much and I don't feel like spoiling my cake baking experience because I have hyperactive smell glands. Another summer recipe with another favorite summer fruit of mine. Peaches and apricots have always been my favorite summer fruit and I just love them. With all my allergies a few years back these two fruits never disappointed me. They were always something I could eat with no discomfort and I love them. This is episode 16 in my summer recipe series, and I want everyone to try this easy peach recipe to make before the peach season goes. INGREDIENTS -
For peaches base
4 medium ripe peaches (I have taken semi-ripe peaches), chopped
Jaggery powder, to taste
3 Cloves
1 tsp cinnamon powder
1 tbsp apple cider vinegar
3 tbsp semi soft butter
A pinch of salt
If you want some good apple cider vinegar then you can opt for Dabur Himalayan apple cider vinegar which is raw, unfiltered and unpasteurized.
If you are looking for an organic option for jaggery then this Two brother's organic farms jaggery powder is great. It is certified for being glyphosate free. It is natural, chemical free and quite economical.
For the cake layer
2 cups oat flour
8-10 tbsp rice flour
2 tsp baking soda
1.5 tsp baking powder
1.5 tsp dry ginger powder
A pinch of salt
Condensed milk, to taste
water, to make batter
4 tbsp ghee
Mixed berries Greek Yogurt for serving.
METHOD -
1. In a pan take all the peach base ingredients and cook the peaches on low to medium heat until the peaches are soft and there is a thick liquid at the bottom.
2. In a big bowl take all the cake ingredients, dry ingredients first followed by ghee, condensed milk and water. Make a nice cake batter. It should not be thick or heavy but pourable but still a little thick.
3. In a greased baking tray of choice, pour in all the cooked peaches with the liquid. Leave some liquid behind for the art on top. Remove the whole cloves. Make a nice layer at the bottom.
4. Now pour the cake batter over the peach layer, tap the cake tin to let everything settle and eliminate any air bubbles.
5. Drop the drops of cooked peach jaggery liquid on the top and use a pointed tool like a skewer or knife and swirl it around connecting the dots to make a random pattern on top.
6. Bake it at 180 degrees Celsius for 25 minutes or until the skewer comes out clean. Cool on a cooling rack and serve warm with Greek yogurt of choice.
7. Indulge in this warm peach cobbler or eat it cold. It tastes indulgent either way.
