Plum Cake | Glutenfreewhisk

I have tried baking this gluten free plum cake for the first time and trust me this is one of the best recipes ever for a gluten free cake. I have earlier posted a Whole wheat plum cake with rum recipe and trust me this version tastes heavenly or even better than my regular or usual plum cake every Christmas.

The cake came out to be spongy and perfectly baked. I have used rum in my recipe to add the flavor and celebrate the Christmas vibes but if you do not consume alcohol, you can skip it and soak the ingredients in water with vanilla or freshly squeezed oranges.

I would also like to mention my mom in this recipe for helping me understand an ingredient that I thought to be a waste and was about to discard it, but she told me how to use it, and it turned out to be really good. I was trying to remove the hard flesh of dry dates without soaking them. She guided me that they are supposed to be soaked first them they become nice and fleshy. So, a shout out to her. But I remembered as a kid I use to eat them just like that without soaking. Maybe it is because of the variety or the duration of drying these yellow dry dates. 

Everyone has a different recipe for plum cake and what I have posted earlier I have done a few changes here and there. The major difference is the flour used and some minor differences are the duration of soaking, the duration and temperature of baking and a few changes in ingredients. The constant is cashew as I believe that a plum cake without cashew is like a river without water.

INGREDIENTS for soaking - 

Handful of cranberries, dried apricot, raisins, dry dates

10-12 Cashews, chopped

Half cup water

Half cup Rum

1 tsp dried ginger powder

Half a flower of mace

1 tsp freshly crushed white pepper

1 tsp clove powder

1 tsp cinnamon powder

2 tbsp brown sugar


INGREDIENTS for cake - 


5 tbsp Oats powder

1 and a half tbsp rice flour

1 tsp baking powder

1 and a half tsp baking soda

2 pinches of salt

1 tsp dry ginger powder

1 tsp cinnamon powder

Water, as required to make the batter

Condensed milk as per sweetness required

 2 tbsp melted Ghee


METHOD -


1. In a bowl add the ingredients for soaking - raisins, cashews, dry dates, cranberries, the spices with water, sugar and rum and allow it to soak for almost 24 hours. This leads to a strong and rich influx of flavors.


2. Preheat the oven at 180 degrees Celsius. Grease a baking tin with ghee and set aside.


3. In the same bowl of soaked ingredients add the ingredients for cake and mix the batter using cut and fold method. Make sure the consistency of the batter is thick yet pourable and not runny. Also, make sure there are no lumps formed.


4. Pour the batter in the greased baking tin and level it evenly. Now tap the tin on the kitchen top lightly a few times to remove any air bubble.


5. Bake the cake in a preheated oven at 180 degrees Celsius for 45 minutes.


6. Once baked, allow it to cool on a cooling rack. Demould it, slice and indulge.


Note- You can add any berry of your choice. Like blueberry, dried figs, fresh dates or any other nut of your choice. Make sure you add it in good quantity depending on the size of your cake like I have so that you get to taste it in every single bite.
