I have made this chili mango salsa recipe with my changes and twists obviously and since I am not a spicy food lover this salad was really hot for me. I have pickled my mirchi in the same brine with red onions for minimum of 3-4 days in refrigerator. Because my red onions were already pickled and they were resting in refrigerator. You can make a fresh solution with apple cider vinegar, water, salt, sugar, nigella and fennel seeds for your mirchi. Ferment it for a few days at room temperature then keep it in refrigerator.

INGREDIENTS -
1 mango, diced
7-8 Pickled onion rings
8-10 black olives, sliced
1 tsp dried mint leaves
Handful of chopped coriander leaves
salt
1 tsp red chili flakes
half sliced, deseeded green big mirchi
half a cucumber, diced
3 tsp dried cranberries
Juice of 1 lemon
With so many options to buy from I am using Nutty Gritties dried cranberries and they are soft, delicious, and my go-to.

METHOD -
1. Take chopped cucumber, mango, chopped coriander leaves, pickled green big mirchi and pickled red onions in a big bowl.
2. Add lemon juice, red chili flakes, dried mint leaves, chopped olives and salt to taste and mix it all up well.
3. Garnish with coriander leaves and serve with nachos and mango soda shots and indulge.
Note - Use red bell peppers and jalapeƱos if you want but this mango salsa is the basic recipe and you will enjoy it. Since mangoes are sweet naturally, I will not recommend any additional sugar. But if you like you can add sugar as well.
