Who doesn't love apple pie in the morning? I would love to have a gluten-free version of apple pie every day in the morning, and the plus point is it is healthy and a perfect option for a quick breakfast fix.
A lot of different versions of morning oats can be made using this recipe. Use any fruit of your choice, any nuts/seeds can be added to it, and you can also make your own additive-free flavored curd/yogurt. You can use bananas, mango, berries or any other seasonal fruit or a mix of two fruits. I used apple as I was craving for some apple pie, obviously a gluten-free one. Also, for this recipe I am only using sunflower seeds, but you can play with it and add pumpkin seeds, chia seeds, almonds, walnuts or any mix you like.
Fixing a quick breakfast is always a challenge. Overnight oats must be a regular for a lot of people who are busy in the morning and don't have time to make Chilla or other time taking breakfast. This recipe will take 12 mins of your time but will keep you nourished and energized until your next meal. All those who find ways to not eat fruits or have no time and skip fruits all together, this way of eating your favorite fruit is unmatched.
This recipe can both gluten free and Vegan if you choose the right ingredients like gluten-free rolled oats and vegan curd/ yogurt of your choice.

INGREDIENTS -
1 Apple, Chopped
2 tsp of sunflower seed
1 Cup Gluten-free oats
4-5 tsp of Brown Sugar, or as per taste (you can even use honey)
2 tsp Cinnamon
3 tbsp Curd/Yogurt/vegan-yogurt
1 tbsp Dried Coconut
METHOD -
1. In a pan roast oats and seeds of your choice. Once the oats are about to be roasted add the Coconut and turn off the flame. Add some sugar and mix the content well. The heat of the pan will roast the coconut and will melt the sugar just enough to add flavor and not caramelize or become sticky.
You can add cinnamon at this step, like I did as I love the flavor of cinnamon. Else you can skip it in this step and add only once in the later step as mentioned.
2. Transfer the content on a plate and in the same pan add half chopped apple, remaining sugar and cinnamon and some water, turn the flame to low once the water gets a boil, cover and let the apple cook until they turn soft. Once the apples are soft, let the water evaporate and the caramelized sugar coat the apples.
3. In the meantime, take the curd/yogurt in a blender jar with rest of the half apple cubes and blend it. I have not added any sugar/honey at this stage as the recipe is already too sweet for me. But you can go ahead and add any sweetener of choice here.
Please, check the consistency of the curd-apple mix, what I have kept is not too runny or too thick as I like my oats to soak some juice and not be very crunchy. But a mix of both crunchy and soaked. The choice is totally yours.
TIP - Use thick curd and frozen fruits if you want your curd/yogurt mix to be thick.
