Honey Roasted peaches with rosemary | Glutenfreewhisk
I personally think, eating cooked fruits have its own charm and it makes the fruit taste way better than eating them just like that. It should not be done with all the fruits though, but this is a great way of eating some fruit as a healthy dessert option roasted in butter or ghee. I mostly opt ghee, but butter is amazing as well. In the past I have made cinnamon and vanilla roasted pear in red wine, and it was just perfect recipe. I have done this with plums as well when I was very young. And recently I have made apricot muffins by roasting apricots first and then making upside down kind of muffins and I will share the recipe for the same soon enough.
For the love of peaches, I have to try this recipe. There are many recipes online that you can find but I have used ghee to roast them and those chopped almonds and pumpkin seeds on top. These not only adds a perfect crunch but also gives this recipe the nuttiness that compliments the recipe. Also, I have served these roasted peached that are a little tangy even after adding honey which was perfect as I served them with homemade salted caramel vanilla ice cream with tequila and everyone loved it and literally licked their plates off. Have it just like that or have it with ice cream or Greek yogurt, this recipe is amazing.
This honey roasted peaches with almonds, rosemary and cinnamon are an easy no bake peach recipe that can be fixed with minutes for those late-night sweet cravings. They are pan roasted in ghee with honey and cinnamon powder and to add a sharpness rosemary just works perfectly.
As I say there are few food combinations that are just banging and this combination of peaches with rosemary is one such combo. The sharpness of rosemary, the sweetness and tanginess of peaches is actually great on your palate. Just like I have used cinnamon and rosemary to make honey glazed roasted peaches you can even use lavender or elderflower instead of rosemary. These too are great combinations and worth the try.
If you don't have fresh rosemary, then you can check this Yaara rosemary leaves that are organic, dried and chemical free. I have used rosemary from my kitchen garden, and I have this plant for more than 8-9 years, I guess. Fresh rosemary has a better feel and taste in your mouth than the dried one but if you don't have fresh leaves dried works just fine. You can add the dried leaves as whole and not break them and later choose to remove them as well. For some frugal almond try Tata sampann pure California almonds that are good.

INGREDIENTS -
1 peach, sliced in half moons
2-3 tbsp honey (or as per taste)
1 tsp cinnamon powder
2 tbsp ghee
A dash of water
5-6 rosemary leaves, chopped
A pinch of salt
For garnish
1 tbsp roasted almonds, chopped
1 tbsp roasted pumpkin seeds
A rosemary spring
METHOD -
1. In a pan dry roast some chopped almonds and pumpkin seeds and set aside to cool.
2. In the same pan take ghee, once it is warm add the chopped rosemary and then place the sliced peaches on it. Add a pinch of salt, cinnamon powder and glaze them with honey. Cover and let the peaches soften and absorb the flavors.
3. Make sure the flame or heat is low to avoid burning of honey, spices or even peaches. Add a dash of water if you feel the peaches will take a little longer to cook.
4. Once the peaches are soft and the liquid is thick and gooey. Place the peaches on a plate. Garnish with roasted almonds and pumpkin seeds. Place a spring of rosemary on top and indulge.
5. Enjoy it with ice cream or Greek yogurt or just like that they are indulgent.
Note - You can use salted butter instead of ghee and salt to pan roast your peaches. I prefer homemade ghee, so I have used the same. Maple syrup or white or brown sugar can be used to roast the peaches as well. No set rule there. Use any sweetener of choice. Even jaggery will be great.
