Salted caramel vanilla ice cream | Glutenfreewhisk
Making my own salted caramel was a challenge but making an ice cream is not a challenge anymore. Because I love making my own alcoholic version of my favorite ice cream flavors. And this one is with tequila. I made two batches of salted caramel without any actual measurements and eyeballing the ingredients and without any temperature checker and both the times, results were great, but they were different. That's why some recipes do require measurements but as stubborn as I can be, I will continue not to complicate a recipe and use a mother way of doing things because I have got the eyeballing measurements skills from my mother. And if you have that in you great but I will share the accurate measurements that you can follow along when I will share the salted caramel recipe with you.
This salted caramel vanilla ice cream flavor has become my new favorite. The roasted almond on top just amplifies the beauty and taste of this ice cream recipe. I am not a fan of vanilla ice cream at all but I have this vanilla pod with me and I wanted to make my own rich vanilla ice cream so I made it better with homemade salted caramel and I am the happiest but everyone in my house especially my mother loved the recipe. We devoured the bowl in just a week.
I have added ghee in my salted caramel that just make it creamy and glossy. And I have realized that even if you overcook the sugar a little and it starts to clump together, the recipe is not wasted, you can get back the caramel by adding regular water and turning off the heat. And letting the sugar dissolve again in its heat. Unless you have burned it. There is no coming back from there. Patience is the key while making salted caramel and as many precautions you have to take while handling sugar it is actually fun to make it.
You can store your salted caramel in a refrigerator for weeks. I enjoyed it with my homemade oat granola recipe and with chopped tangy fruits like peaches and with my overnight oats and I have indulged in it to the fullest.

So, the full recipe name should be homemade salted caramel ice cream with tequila. Fun right? This no egg, no churn, no ice cream maker ice cream recipe is super indulgent and a must try, Salted caramel is favorite flavor to many and once you make this easy and best salted caramel ice cream at home you will know why exactly.
INGREDIENTS -
1 cup fresh salted caramel sauce
250 ml heavy whipping cream
A shot of tequila
seeds from 1 Vanilla pod
Roasted chopped almonds for garnish
Some salted caramel sauce to drizzle on top
METHOD -
1. In a bowl take frozen heavy whipping and beat it slightly using an electric beater.
2. Once smooth and free of frozen lumps add the vanilla seeds and whisk a little again.
3. In another bowl take the fresh salted caramel sauce. (Mine was still a little warm so I am working with it separately first, so that the heat from the caramel does not impact my recipe.) Take some beaten heavy whipping cream and pour it in this caramel sauce and whisk.
4. Now add this whisked caramel to the original heavy whipping cream bowl and whisk everything together. Add the tequila shot and give it a final whisk. (In the YouTube video you can see I have added half a tequila shot but I strongly suggest you add a full shot to get more taste).
5. Smoothen the top once everything is whisked well and combined and almost double in size. Cover and let it freeze overnight.
6. Next day scoop out the ice cream generously, garnish with some salted caramel and roasted chopped almonds and indulge.
Note - Adding of alcohol is totally optional. If you are not using fresh/warm salted caramel you can skip step 3 and add it directly to the main bowl of beaten heavy whipping cream.
I use this Black Philip 300-watt hand mixer with 5 speed option to make my ice creams at home. You can use the same. The bowls that I swear by are both microwave and dishwasher safe and have a lid that makes my work easy. The Cello Ornella toughened glass mixing bowl with premium lid are the best pick for this recipe. Because covering the ice cream while freezing is very important step.
