 A kid's friendly ice cream recipe and for all those who have a sweet tooth but want to keep a check on their weight and healthy habits. This guilt free mango ice cream is healthy, tasty and perfect for this summer season. These are the first mango of the season, and they apparently are not very sweet or deep yellow in color. Maybe because of the variety, I have no idea of the types of mangoes except for a few. I used whatever my dad got, and it taste just like mango. No additives, no artificial color just pure ingredients and super easy recipe for natural and creamy mango ice cream.

Yes, for this you should have mould to set it in but as Indians there are many jugad options that you can have. Like using steel glass, or even kulfi mould that I am sure your mother has them hidden somewhere because every household have those at some point. I got this 8-cavity silicon ice cream mould that I asked my dad to chop in two halves. Yes, we basically cut it up with scissors. Just like that. It was super difficult to carry an 8 mould to the freezer and then transfer it to the rack. When I made my last guilt free lactose free ice cream it was a little runny liquid and it too an army to transfer the 8 mould to the freezer. So, this time I made it simple. It's that easy and jugadu. But I will recommend that you buy 4 cavity big and oval silicon mould for ice cream so that things become easier.

If you are not on diet and want some real ice cream with cream and fruit, then try my persimmon ice cream. This is orange, creamy, tasty and delightful. I also have some amazing ice creams with alcohol because I love to add the right alcohol to my ice cream to add the kick. You can try my coffee ice cream with vodka or kesar pista ice cream with rum.

Mango is everyone's favorite fruit because why not, it is sweet and so tasty that there is no comparison. And with mango I have to make mango ice cream that is healthy. Because eating ice creams in summers is like a ritual. And when I say eating them, I mean having it daily. A bad habit, yes, do I regret it, no. So, to curb I have to make a healthier alternative that is equally tasty. But for me nothing beats a good, rich, dark chocolate flavored ice cream. But these natural mango ice cream with condensed milk is giving it a fair fight as it is way healthier and creamy.

I have used condensed milk to make this creamy mango ice cream, but you can also use milk of choice with honey to add to the sweetness. But I preferred using condensed milk because as I mentioned that I am using season's first mango and it is not very sweet as mangoes generally are naturally. And I want a creamier texture. This no-churn, no milk, no cream, no ice cream maker mango ice cream is so delicious that it will become yours and your kids favorite. The question arises how to make this creamy mango ice cream at home without ice cream maker.

Because in every home there are picky eater who either hate vegetables or can't stand healthy ingredients hidden but they won't even have to know that they are eating high protein and good fat rich nuts that will keep them energized and satisfied this hot summer season.


INGREDIENTS - 



1 mango, chopped and frozen

1 cup fox nut, almonds and cashews soaked overnight

(10-12 fox nut, 7-8 almonds & 7-8 cashews)

Condensed milk, as per sweetness required


For decoration


Chocolate chips

Colored small sugar balls

Chopped pistachios, salted



METHOD - 



1. Blend overnight soaked fox nut, cashews and almonds with frozen mango and condensed milk to a very fine paste without any water or liquid.



2. Once done pour it or scoop out and fill the silicon ice cream mould cavity. Decorate with chopped pistachios, chocolate chips and sugar decoration and freeze these overnight to set.



3. Indulge in 1 or maybe two sticks and devour these healthy, creamy, guilt free mango ice cream with condensed milk. 


Note - Use any mango variety of choice. If you want a vegan version of these natural, creamy mango ice cream then instead of regular condensed milk use vegan or plant-based coconut condensed milk.
