Chicken soup with tofu balls | Glutenfreewhisk

 Having chicken soup when you are sick must be a memory for many. But this chicken soup is not only for sick days. It is for those days also when you don't feel like cooking and you can just throw everything in a pan and relax. For those hot summer days when you need something comforting and healthy. It is a complete meal with vegetables, sauces and tofu balls. A one pot recipe that is perfect to welcome these hot summers because who wants extra utensils and extended cooking in this heat.

I love eating chicken and this one pot chicken soup that can be even name as Lemon chicken soup with vegetables and tofu balls is my new favorite. Simple, mild flavors with so many vegetables and an additional carb/protein element as tofu balls makes it so wholesome. Soup really is a complete meal when made that way. There are soups like clear lemon coriander soup that is basically just flavors and water/ stock which is tasty no doubt but more of a before meal soup to stimulate appetite and aids in digestion. But my recipe for this chicken soup with tofu balls is a complete meal in itself. Fiber, carbohydrates, protein in abundance and vitamins to complete it all.

Initially I was planning to make tofu noodles but rolling thick noodles was not something I wanted to do. After if I was using a namkeen maker machine with noodle like cutter was given very thin noodles that were breaking easily and were not appropriate. So, after many trial-and-error cases I finally decided to make tofu balls and honestly, it did not make much of a difference. It tastes good and the recipe is full proof. At the end of the day what matters is a good recipe with good mild flavors for a hot summer meal bowl. 

The namkeen maker that I was using is a stainless steel namkeen maker with 15 different jalies/ cutter to make snacks. It is multi-purpose and easy to use. You can check this out as it is economical as well.

But this chicken soup is equally comforting and light to make a place in my summer recipes series. And this is episode 3 of my summer recipes. The first one was guilt-free creamy mango ice cream, and the second one was the best coffee drink you can make for yourself, strawberry coffee with sago pearls. And now it is this comforting one pot meal recipe.



INGREDIENTS -



For tofu balls


180 gm Tofu

6-8 tbsp Rice flour

salt to taste



For chicken soup


2 tbsp oil

4 cloves of garlic, chopped

2 tsp cumin seeds

1 tsp carrom seeds

1 tsp grated ginger

1 chicken breast

4-5 Spring onions, chopped

2 carrots, chopped

150 gm button mushrooms, chopped

half a cup green pea

4 tbsp Soy sauce

Juice of one Lemon

Salt, to taste

2 tsp black pepper powder 

2 tsp roasted cumin powder 

1 tsp dried mint leaves



For garnish


Roasted white sesame seeds

Spring onions



METHOD - 



1. In a thick bottom pan take the oil, heat it a little and crackle jeera, ajwain and add chopped garlic and grated ginger. Roast the garlic and ginger a little. 



2. Now add spring onions, a splash of water to prevent anything from burning. Cook a little then add chopped carrot, mushrooms and peas. Followed by water. Cover and allow the vegetables to cook up to 80%. 



3. In the meantime, blend tofu to a very fine paste without and water. Set it out and add rice flour and salt to it. Knead gently to make a nice soft dough. Make round balls out of it and set aside.



4. Now add whole chicken breast and cover and let it cook. Once done take the chicken breast out and shred it using a fork and add it to the pot again.



5. Add dried mint leaves, lemon juice, soy sauce and keep the flame very low.



6. Now finally add the tofu balls to the pot and let it cook. It will take around 8 - 10 minutes. Turn off the heat and cover and let is all rest.



7. Serve chicken soup with tofu balls garnishing with some Spring onion greens and roasted white sesame seeds and indulge.



Note - Adding salt to tofu balls is completely optional. You can add any vegetable of choice. Whatever you have in your refrigerator that will go well with chicken like sweet potato, bell peppers, broccoli or even cauliflower. Add spinach, kale and even coriander to this chicken soup.
