Chocolate cookies with white peas | Glutenfreewhisk

 With healthy food and healthy recipes especially desserts with dates and high protein ingredients trending everywhere on social media. I decided to make chocolate cookies with some leftover boiled white peas or white matar. Lately I have been using white peas in a lot in my recipes, so I thought why not make a healthier version of cookies with white peas. Trust me when I say this, that no one will be able to guess or even notice that there is boiled white peas in these cookies. The best part about homemade cookies is that they are soft and you can keep the sweetness to your liking without making them overly sweet.

In the past I have used white peas or white matar in a variety of recipes like white matar chaat with nachos, which is basically a gluten-free papadi chaat version for a chaat lover like me. I have also made two salads using white peas. One was white matar salad with tahini honey dressing and other was roasted cauliflower pumpkin salad with moringa leaves it is super delicious and nutty tricolor salad recipe in peanut butter dressing, and it is so addictive and so fulfilling meal that you will eat this on repeat throughout the season. I have also made white matar hummus recipe that turned out to be a great and an easy hummus recipe. 

I am making these cookies gluten-free and am using oat flour and instead of using any milk or water I am using Greek yogurt to bring the batter to the consistency of a cookie batter. I am doing everything in a blender, but you can choose to use a bowl. Just blend the boiled white peas in a blender and transfer it to a bowl and add rest of the ingredients there. And honestly speaking I really don't care about how round and good looking my cookies look but if you like you can make them as round as possible and keep the batter like a cookie dough and place round mass of dough on the baking sheet and then flatten it out evenly. I even had some whole white peas peeking out from the cookies and I still enjoyed every bite of these cookies.

Also, I have just used a little ghee to grease my baking tray and have made these cookies oil or butter free, but you can add some fat of choice. If you wish to make these chocolate cookies with white peas recipe vegan, then use vegan curd and vegan butter or skip butter all together. My chocolate cookie recipe has got the perfect rise and airiness in them considering the consistency that I have kept of the cookie dough. Like I have mentioned in my earlier post that this is the protein era as the social media trend calls it and making healthy desserts and meals with protein majorly is the goal everywhere. So this recipe is fibrous, high in protein and super healthy because there is no oil used and white peas are both rich in fiber and protein with other dietary advantages. Also, the use of Greek yogurt helps in the protein element even further.

A simple recipe with minimal ingredients always works the best. Don't just fuss with the perfect shape and size. All you have to do is bake something healthy and just indulge. If it tastes good no one will care how imperfect they look. The garnish always helps. Because my cookie plate white chocolate, green pistachios and beautiful pink madumalti flowers looks like an absolute delight.

For oats I am using yogabar rolled oats as they are gluten-free, non-GMO and plain.


INGREDIENTS -


1 cup white peas, boiled

2 tbsp unsweetened cocoa powder

2 tbsp desiccated coconut

4-5 tbsp oat flour

half a tsp baking soda

50 ml Greek yogurt

Honey, to taste

half tsp cinnamon powder


For garnish


Melted white chocolate

Chopped pistachios

Madhumalti flower



METHOD -



1. In a blender take boiled white peas with cinnamon powder, unsweetened cocoa powder, desiccated coconut, honey, Greek yogurt, baking powder and oats flour and blend it all to a nice smooth cookie batter.



2. I will suggest to not use any water and keep the batter thick for a nice cookie. If the batter requires some liquid, then add extra Greek yogurt accordingly. 



3. Grease a baking tray with ghee and pre-heat the oven at 180 degrees Celsius.



4. Once the batter is ready, use a spoon and place spoonful of batter with a little distance from each other on the greased baking tray. Flatten them a little and try to make them as round as possible. I don't fuss in the shape a lot personally. You can try to make them equally round and measure everything or use a ice cream scooper.



5. Bake them for 10-12 minutes in a pre-heated oven at 180 degrees Celsius or until they are nice and done.



6. Allow them to cool. Then garnish them with melted white chocolate by dipping the top of the cookie in it and sprinkle chopped pistachios on top. Refrigerate the cookies for some time to let the white chocolate set.



7. Plate them, garnish them with some fresh flowers and indulge with a mug of tea or coffee.


Note - I am making these chocolate cookies oil-free, but you can even add some butter or ghee in this chocolate cookie recipe. You can add about 2 tbsp ghee or butter for this quantity of batter.
