Gluten free Chocolate Chip cookies
Sweet cravings are so amazing. I get them a lot and me being intolerant towards gluten has really limited my choices or nullified store-bought options all together. So, an easy and perfect way out of this is bake your own delights at home. These are loaded with good ingredients and zero preservatives thus are healthy way to indulge in these treats.
I started baking quite early getting inspired by my mom's go to vanilla sponge cake and watching some amazing talented chef on television as a kid. I find cookies to be really easy recipe to start with and see if you have that baker hidden in you. A simple chocolate chip cookie recipe can never fail as, it requires just a few ingredients and voila! Your cookies are baked and maybe you qualify as a home baker.
Using almost same ingredients I have gluten free muffin recipe available, if you prefer muffins over cookies them you can check that out. Enjoy your cookies in the morning with milk or tea or have them with your evening tea or coffee. Do try the recipe.
RECPIE:
Ingredients
2 cups Gluten free rolled oats, finely grinded
1 and a half cup rice flour
vanilla essence
1 tsp baking soda
1 tsp baking powder
50-60 gms salted butter, melted
3 tbsp Dark brown sugar
water as required to knead dough (scoopable and not runny)
Handful of chocolate chips to decorate on top
METHOD-
1. Pre heat the oven at 180 degrees. Grease an oven tray with ghee and set aside.
2. In a bowl combine the dry ingredients like oats flour, rice flour, baking powder, baking soda, brown sugar and mix it. Make sure you sieve in both the rice flour and baking powder and soda.
3. Add the wet ingredients like melted butter and vanilla essence. Combine everything and add water only that much that is required to make a batter.
4. Use your hand by rolling small round balls and then flatten them with your palm and arrange them in the greased tray. Or you can use an ice cream scooper to scoop out small balls and gently press them to give cookie shape.
5. Decorate them with chocolate chips and bake for 12 mins.
Enjoy the crispy yet soft cookie with your tea/coffee on they are cool.
