White matar chaat with nachos | Glutenfreewhisk

 For the longest time I was planning to use white matar to make some great recipes and now that it is summer season, I have finally made three amazing recipes with white matar. They are so different even when the basic ingredient is the same and I love all of them. The first one that I am sharing is this white matar chaat served on a Greek yogurt and gluten-free nachos bed. Inspired from papdi chaat this gluten free and healthy version is an absolute must try. For all those who are gluten intolerant or have chosen to be on a gluten free diet then I am sure you must be missing the feeling of having the papadi chaat because I do. This recipe of white matar chaat is so much better than the maida papadi chaat.

White matar is commonly used in our houses to make the OG curries and is widely used in making ragda for the famous ragda patties. White matar chaat is also a common street side snack item that is made with a lot of spicy, onion mix kind of semi gravy chaat and is famous as Delhi style white matar chaat. But my version is spice-free, gluten-free and hassle free. The only hassle is to make your own imli chutney and the green chutney. Rest it just boiling, chopping and assembling. 

I personally love chaat. Even when I used to consume gluten, my go-to chaat pick was dahi wale suji ke batashe/patashe. Now my go-to is dahi bhalla as it is gluten-free. I simply love my chaat and I eat it occasionally savoring every bite. My way of eating is simple and spice free food. And this is the reason I have made my own green chutney and imli ki chutney because I wanted it to be spice free. The market bought are not up to the mark and spoils all the fun. But if you are into spicy food then you can make your own version or get the store bought one as well.

The green chutney I have made is fresh with coriander leaves and stem, mint leaves, lemon juice, salt, sugar and black salt. The red imli chutney has imli pulp, roasted cumin powder, salt, jaggery, fennel seeds and melon seeds. One is tangy and one is sweet. Also, I have used thick Greek yogurt, but you can even use thick curd or hung curd to get that creamy texture. The choice of nachos is also versatile, and my personal favorites are cheese and herb and sweet chili one from Cornitos. These nachos are gluten-free and crispy and for this gluten-free white matar chaat with nachos recipe I am using the sweet chili nachos from cornitos. The spice from the nachos is just perfect to my liking.

The other two white matar recipes that I have made are white matar salad with tahini and honey dressing and White matar hummus. All the three white matar recipes are just perfect and gives justice to the simple yet so versatile white matar that we have in our kitchen pantry, that I mother cook so often.

This recipe will be made on repeat at my home because it is that good. You have to try this gluten-free chaat recipe with white matar. It is sweet, fulfilling, tangy and crunchy, a perfect snacking snack to indulge in.

INGREDIENTS - 


For the chaat


1 cup boiled white matar

Half a cup chopped tomatoes

Half a cup chopped cucumber

5-6 Pickled onion rings

1 tsp oil

1.5 tsp chaat masala

Salt, to taste

1 tsp roasted cumin powder



To serve and assemble


90 gm Greek Yogurt

2 tbsp Sweet Imli chutney with jaggery

 2 tbsp tangy mint & coriander chutney

Lemon slice

4 tbsp pomegranate seeds

Half a pack Cornitos sweet chili Nachos (they are gluten-free)

A coriander leaf



METHOD - 


1. In a bowl take the chaat ingredients - Boiled white matar, chopped cucumber, tomatoes, chopped onion rings glaze and mix these in oil.


2. Now add chaat masala, salt, roasted cumin powder to the above mix and toss it all well.


3. Assemble the white matar chaat on the serving dish. First spread Greek yogurt on the plate. Then drizzle both green and red imli chutney on it followed by roughly crushed nachos. 


4. Now place the prepared white matar chaat on the top of nachos. Add more Greek yogurt on top followed by both green and red chutney. 


5. Finally, garnish with pomegranate seeds, coriander leaf and lemon slice on the side and serve immediately.


Note - Prepare it fresh to have the crunch from nachos because if you prepare and keep it the nachos will turn soggy. You can add as much curd/Greek yogurt as you like.
