White matar hummus recipe | Glutenfreewhisk
I have made two hummus recipes in the past. One with the original chickpea and one with black eyed peas. And trust me both the hummus were just great. Now this amazing white matar hummus is just perfection in texture, taste and the process is exactly the same. If you have tried all the three-hummus recipe then you will know the difference in taste, and you can make your own pick as to which is your favorite. Or like me it will be impossible for you to choose, and all will become your favorites.
This is the third white matar recipe in my way of using the OG white matar or white peas that are so common in Indian kitchen. White peas get cooked easily. I pressure cook them but first I wash them and soak them overnight. And then it just requires 10 minutes in a pressure cooker and they are done. Talking about hummus, there are many flavors that are added in hummus recipe over the year like beetroot, basil, turmeric, pumpkin, etc and all have instantly become favorites among people who love hummus in general. And what is not to love in it, right? The silky-smooth texture and that non-spicy flavor bomb makes you love non-spicy food even more. My recipe for black eyed peas hummus has received a lot of love and trust me hummus is the best way to eat lobia. It is 10 times better, tastier than eating lobia curry. In my recipe I am using both white and black sesame seeds to make fresh tahini paste that really makes a difference in the taste and texture of this hummus making it worth it for sure.
You can even try my recipe for the classic white chickpea hummus. If you end up ordering hummus platter every time you visit a fancy restaurant then try making it at home once. It is absolutely simple and requires just a regular blender and some boiled peas of choice. The question arises how to serve it. No pita breads no problem have it with any bread available or serve it with fresh cucumbers, gluten-free nachos, olives, tomatoes and more like I have.

You can buy tahini paste online as well; a large variety and brand are offering it but will recommend you make your own fresh white tahini paste and enjoy the hummus.
INGREDIENTS
For tahini paste
Half a small cup white sesame seed
Juice of 1 lemon
2 cloves of garlic
Salt, to taste
50 ml cold water
4-5 tbsp neutral oil
1.5 tbsp roasted cumin powder
For white pea hummus
1.5 cup boiled white matar or peas
Salt, to taste
2 tbsp neutral oil
For garnish
A pinch of roasted cumin powder
Half a tsp neutral oil
Gluten-free Nachos
Black olives
Sliced cucumber
Coriander leaf
METHOD -
1. First to make the tahini paste, dry roast the white sesame seeds lightly in a pan. Once done allow it to cool. Transfer them to a blender jar. Add the rest of the tahini ingredients mentioned above and blend to a fine paste. Make sure you are not over blending and using cold water.
2. Now add boiled white matar or pea to this tahini paste and blend again. You can adjust the salt and lemon here, as per taste. Use only cold water to blend here as well. Add the neutral oil as mentioned in the ingredients above.
3. Once you get a nice thick smooth consistency serve it with sliced cucumbers, olives and nachos of choice. Garnish the spread hummus on the plate by drizzling oil, sprinkling roasted cumin powder and place a coriander leaf for aesthetics.
4. Simple indulge by having heaps of it.
Note - It is advised to use neutral oil with not taste or smell or after taste (pungency) of its own, like olive oil. But I have used regular oil here in this recipe which makes a slight difference in the taste, but I will recommend use of a neutral oil as is done with hummus recipes.
