 Talking about summer drinks and not including summer fruit lychee or litchi that too in an absolutely banging summer drink then you are definitely missing out the summer fun. This lychee drink with green tea is for all those who loves mocktails. The sweetness, the mild bitterness and the kick from fennel and nutmeg are a successful amalgamation that works for your taste buds so well that this drink will become a new favorite. This lychee green tea drink is super easy to make and is best enjoyed chilled.

You can even make this lychee green tea mocktail drink as a lychee cocktail drink with martini or vodka, and it will be an absolute banger. Keep rest of the recipe same and you can make yourself the best fruity alcoholic cocktail with litchi. These flavors together are great. I decided to add fennel and nutmeg because fennel goes really well with green tea, the fragrance of it in itself just works and nutmeg adds that kick. I have seen people on social media making different desserts with lychee and I too was thinking to make lychee ice cream, but I wanted something refreshing that is quick and does not require a day's wait. So, I came up with this lychee drink that is a perfect recipe to share during this time, that is the summer season.

I have also made another very similar version of lychee summer drink but that is with sago pearl boba and blue pea tea. The drink too is amazing in every aspect, and I will share the recipe for the same soon.

In my summer recipe series, I am celebrating almost all the summer fruits with worthy recipes. This recipe is episode 19 and it is dedicated to lychee. A fruit that is favorite to many and is so sweet that it can never go wrong to use it to make drinks or desserts. If you have access to canned lychee then you don't have to use honey at all in this recipe and the juice in the can works perfectly as the sweetener that is basically lychee sweetener as it is filled with lychee flavor. You can use Freshos canned lychee in light syrup that is perfect to make drinks. But I am using the fresh fruit here as it is summer season and lychee are in abundance everywhere in the market. I am adding honey to balance out the lemon and lemon zest used in this recipe with green tea.

INGREDIENTS -



4-5 fresh lychee, pitted

3-4 tsp honey

Juice of 1 lemon

A pinch of nutmeg powder

half a tsp crushed fennel seed

Freshly brewed green tea

2 pinches of lemon zest (my lemon skin was dry so I could pinch it easily, so take the zest measurement accordingly, as it will make the drink bitter)

Ice cubes


For garnish


Ice cubes

2 whole lychees, pitted

Lemon zest

Nutmeg powder



METHOD - 



1. Freshly brew some green tea and set it aside to cool. Add ice cubes to it.



2. In a bowl take the lychees and chop them fine. Add lemon juice, honey, freshly crushed fennel seeds, nutmeg powder to it and muddle them. Let it all incorporate in the flavor and mix them a little for the honey to dissolve.



3. Take the serving glasses, pour a few spoonsful of this prepared lychee honey mix at the bottom, add ice followed by the prepared cooled green tea.



4. Garnish with a whole lychee on the side of the glass with lemon zest on top of it. Sprinkle some nutmeg over the drink, stir, sip in and indulge.


Note - My recipe makes 2 glasses of this fresh and easy lychee green tea mocktail. Replace honey with canned lychee syrup if you have some. Use a lot of ice because this drink is best when serves chilled.
