This coconut chutney recipe is a regular. I love making this super easy, and deliciously amazing coconut chutney. And truth be told I can even eat it just like that. I prefer my chutney to on a little thicker side, there is no set rule for it though, right? I sometimes keep it chunky, sometimes I make it a fine paste but either way it tastes the best. The chana added to it make it so wholesome and add a flavor too that not only makes it high in protein but super delicious.
I have shared another refreshing version of coconut chutney that is with fresh mint and coriander stem, and it is one of the best refreshing coconut chutney ever. Even though I don't make south Indian meals very often, but I make podi masala, sambar and coconut chutney regularly. The sole reason being I absolutely love it. As much as I adore South Indian food because it is good for gut, easy to digest, light on stomach and super delicious, I also love making it. The science of fermentation and the gut friendly batter made naturally is just amazing. The happiness you get seeing your batter risen cannot be explained in worlds.
I use a little sugar as well with salt while making coconut chutney but using jaggery is also a great alternative. Because I am bored of eating the same old dhaniya ki chutney and I could never get bored of these amazing coconut chutney recipes.
Coconut is such an amazing ingredient and using it in both sweet and savory dishes just elevate the recipe all together. Not the mention the health benefits of coconut which are tremendous and like a super food for those suffering from allergies and intolerances as it provides a great deal of nutrients. Rich in healthy fats, high in fiber, iron, magnesium, potassium and regulates blood sugar as well. A perfect snacking option as well for all those who loves munching every now and then.
Coconut is also rich in antioxidants and has anti-bacterial properties and every part of coconut is cherished and used in almost every South Indian household. It makes your skin glow, eliminates dryness and improved hair growth as well. If you cannot include or use every part of coconut, at least try and add coconut to your diet.
I regularly eat fresh coconut, and I always have dry coconut at my home. I have used dried coconut in so many amazing recipes of mine like oats carrot cookies which turned out to be so creamy and heavenly. I have also made coconut butter or as I like to call it vegan coconut paste because I did not have a food processor that is used to make nut or seed butter like a pro. So, I like to call it a paste. But it is a deliciously amazing recipe. And one of my most loved recipe that I have made for numerous festivals because it is that simple and indulgent, my coconut ladoo recipe two ways. Plain coconut ladoo and chocolate coconut ladoo. These are a few recipe where I have used dried or desiccated coconut.
To get the fine chutney texture use the Pigeon by Stovekraft quick blend with 3 jars and trust me this is the best product that I have bought recently. Borges Black pitted olives are Hojiblanca olives imported from Spain, these are really good and are perfect to be eaten with salads.
INGREDIENTS -
Half coconut, fresh and roughly diced
Handful of coriander stems
1 tsp sugar
salt, to taste
Half cup, roasted kala chana
1 small green chili
Water to blend it all
METHOD -
1. Blend everything in a blender and add water to blend the coconut chutney to your desired consistency.
2. If you want a fine to little chunky consistency then the amount of water required will be as much as the height of the blender jar. Just for the idea. Or about 1 and a half glass.
3. Pour it in a glass bowl and serve garnishing with a coriander leaf and indulge.
Note - Instead of regular water you can even use coconut water to add the taste and flavor. Also, instead of sugar use coconut jaggery. Just to make it coconutty.
Use Slurrp farm coconut sugar, a natural sweetener with no additives.
