Vegan Coconut Paste/Butter | Glutenfreewhisk
This is my first attempt with home-made butter recipe. And I would like to call it a paste rather than butter as my grinder was not that strong/powerful to give butter like consistency. I will not say it was an easy task to make butter at home. It definitely requires A LOT of patience and a real good blender/ mixer. Mine was not up to the mark I guess as I at times was struggling with the recipe, and I had to add water a few times. The only drawback of adding water is the shelf live decreases and you will have to refrigerate it. Trust me the taste is not hampered at all.
I choose to make my first home made butter to be coconut butter because I love coconut and blending it a billion times seemed easy. But the same amount time and patience is required for this coconut butter/paste also.
I am sharing this recipe as it tastes really good and I have used this paste in two of my recipes. The first one is the Vegan oats and carrot chocolate balls, and the other one is oats carrot cookies.
The best part about this recipe is that it required very less ingredients and it is vegan. The consistency that came out was really smooth. But I really wished I had not made a few mistakes which I have mentioned below in the steps. Apart from that taste and health wise it is a full proof recipe to follow.
INGREDIENTS
2 cup desiccated coconut
A pinch of salt (optional)
Olive oil, as required
Water, as required
METHOD
1. In a blender jar add the coconut, salt and a little olive oil and pulse blend it.
2. Repeat the process of blending at a high speed and pulse blending by adding little oil and water a few times or as required.
Make sure with every blend you open the jar and scrape the side of the blender so that the content does not stick to the sides.
TIP - Make sure you choose the size of the blender according to the content of the ingredients. I initially opted for a bigger jar which made my process difficult, and I had to add more water for my ingredients to blend well. Later I switched to a smaller jar, and it gave me the desired blend.
Also, make sure you are using a good grade blender jar with sharp blades specifically made for making hummus/butter etc.
