Coconut Ladoo | Glutenfreewhisk
Coconut one of the most diverse ingredients that is used in our kitchen for both sweet and savory recipes. If I see South Indian cuisine their meals are incomplete with using coconut, be it coconut milk, coconut oil, fresh coconut or dried/desiccated coconut. Coconut which is greatly packed with nutrients and all the goodness and creaminess, it is very difficult to resist anything made with it. One such recipe is Coconut Ladoo's that I am sharing today.
Making coconut ladoos with condensed milk is one of the easiest and yummiest recipes to make for any occasion or just for your cravings. It is obviously gluten free and totally healthy. For this recipe you only require a few handfuls of ingredients, and you can make them as you like. I have made 2 version - one is plain, with just desiccated coconut, condensed milk, cardamon powder and the other is packed with the goodness of seeds and nuts and have made them in chocolate flavor.
Do you really need an occasion in indulge in some healthy treats. The answer is absolutely a NO! Ladoos that are made in our Indian culture are the healthiest thing that one can eat. They are always made with pure and limited ingredients especially if they are made at home. And the best part of these is that they are made in homemade Ghee. How can one resist ghee is something questionable for me!

For all those who are vegan you can switch ghee with coconut butter or any other nut butter or try another healthy ladoo recipe of vegan oats and carrot balls or ladoo.
INGREDIENTS
For plain coconut ladoo recipe with cardamom
2 cups desiccated coconuts
half a tin Condensed Milk
1 tbsp Ghee
1tsp cardamom powder
some desiccated coconut to roll the ladoo in
METHOD -
1. In a non-stick pan add the ghee followed by condensed milk. Cook this for some time till the condensed milk turn to a light brown shade. (The reason why I prefer cooked condensed milk is it tastes better, and you don't get to taste raw milky taste of it.)
2. Now add the cardamom powder followed by coconut and get it a good mix until everything combines and turn into a ball like thing. Make sure your flame is at sim and turn it off once everything starts to come together.
3. Allow it to cool a bit and start making small balls in the shape of ladoos and place them in a plate with some coconut in it. Roll the ladoo in coconut one last time, very gently just to get an outer layer and enjoy.
P.S.- This mixture will turn out to be super oily once you start rolling the ladoos as the desiccated coconut will also leave its natural oil when added to the pan. So, if you want you can reduce the amount of ghee that we are adding.
INGREDIENTS
For chocolate coconut ladoo with nuts and seeds
1 cup desiccated coconut
2 tbsp unsweetened cocoa powder
1 tsp green cardamom powder
nuts and seeds of your choice, I have used melon seeds and almonds
3 tbsp Condensed milk or 2 tbsp chopped jaggery
2 tbsp Ghee
METHOD -
1. In a non-stick pan add the ghee and roast the almonds and melon seeds. Remove and set aside.
2. Now in the same pan add the ghee again followed by condensed milk or jaggery. Melt the jaggery completely in low flame. Or cook the condensed milk as done for coconut ladoo recipe above.
3. Now add green cardamom powder followed by the cocoa powder and mix really well to make sure no lumps are formed. Now add nuts and seeds followed by desiccated coconut and give this mixture a good stir. Once it starts to come together turn off the heat else the condensed milk or the jaggery will harden and it will be tough to make ladoos or even chew them.
4. Let this cool for some time and start making small ladoos and roll them one last time in desiccated coconut. Enjoy your chocolate coconut ladoos.
