Snacking is the hardest thing when you are gluten-free, and you have very limited savory options specially in north India and on the top of it living in a small city. So, the only option is to make your own snacks and stop whining. In the past I have made bajra crackers with sesame seeds and I added too much of salt by mistake and during that time I was not shooting recipe for my YouTube channel. But now sharing recipes that I bake, or cook is a full-time thing, and a lot of love and support is required from people reading this or watching my videos on YouTube.

About this recipe, my Instagram feeds were flooded with carrot recipes, and I decided to make two amazing recipes myself. One was vegan oats and carrot chocolate balls, and the other was this, Oats and carrot cookies. The former is sweet, and the latter is savory. And both the recipes are gluten-free. Also, I have recently made coconut butter or at least tried making it so I have to use it, and these recipes were the best way. This recipe is amazing as the cookies turned out to be soft, sweet yet savory and creamy because of the coconut butter/paste. The sweetness of carrots really made an impact and added to the flavor. This oats carrot cookies recipe is really good. But if you want them to be as cracker which is crunchier, then you can bake these for extra 8-10 minutes and have smaller and flatter balls to help them become crisp.

As for kids, this recipe is kids friendly and a perfect way to feed your kids some home-made fresh cookies that are indulgent and scrumptious. Happy baking!!


INGREDIENTS -
 

1 cup carrot puree

1 cup coconut butter

1 cup grounded gluten free rolled oats

salt, to taste

1 tsp cinnamon powder

1 tbsp desiccated coconut

Vegan oil/butter to grease the baking tray 



METHOD - 


1. In a big bowl add powdered oats, followed by salt, cinnamon powder, desiccated coconut, carrot puree and coconut butter and bring it all together and mix it well.


2, The batter should be thick and not flowy or runny as you have to shape them as flat cookies using your hand and palm.


3. In a greased baking tray place these cookies and bake them for 15- 18 minutes at 180 Celsius in a preheated oven.


4. Enjoy as snacks or with your morning or evening tea/ coffee. A perfect teatime gluten-free snack.


NOTE - I haven't used any fat like ghee, unsalted butter or oil in this recipe as my coconut butter/ paste was enough and I have added some desiccated coconut as well which will release its oil while baking so I haven't added any additional.
