Orange chicken with rosemary recipe | Glutenfreewhisk

 We all love eating good meals that are tasty and if they are homecooked then it adds to the beauty of the recipe. My recipe for honey glazed orange chicken with rosemary is one such recipe that you will want to eat again and again. The combination of both orange and rosemary goes so well with chicken that it does not require any fancy side and can be enjoyed just like that with rice or with some salad leaves.

Marinating chicken is the key here because you want the flavors to seep in and give you the best, juicy chicken ever. I am using chicken breast here, but you can make this with whole chicken or chicken pieces following the same recipe. Since this easy chicken recipe is honey glazed, while cooking it will caramelize the honey and will turn dark in color, make sure you are careful with the heat or the flame and keep it low and cover and let the chicken cook. Mine has got this amazing brown glaze with chicken juices and this glaze makes it even better.

Rosemary and chicken combination is like match made in heaven and they go really well together. I have rosemary plant in my garden, so I am using fresh rosemary to marinate the chicken with. You can use dried rosemary as well and toast it a little in oil to let its oil work the magic. Also, rosemary has quite sharp, robust flavor so don't overdo it. This chicken with rosemary recipe is simple, easy and flavorful so you have to make it.

I am not using orange juice but orange zest because it has a strong note than the juice and I want my chicken to be without any curry or sauce. I have used Kinnow for this orange chicken recipe, but you can use regular orange as well. For all non-vegetarians and those who love chicken the most, you will enjoy this honey glazed boneless chicken recipe as it is easy to make. All you need is time for marination and a few minutes to pan cook the chicken. Chicken breast is tender and cooks fast so be careful not to overcook it and not under cook it as well. Check it using a knife or a fork and give it time to rest as well. I have mentioned the details below in the method as well.

Serve your orange chicken breast with some salad leaves and a dollop of Greek yogurt by the side but I am serving it with some rice and having this indulgent orange chicken with rosemary for lunch. A perfect meal to indulge in.

My inspiration for this recipe is Donna Hay. As a kid I use to watch her cooking show on television, and she made this honey and red chili flakes chicken breast once and I always wanted to taste it. So here it is a boneless chicken recipe using chicken breast and inspiration from this amazing cook whom I still adore.


INGREDIENTS -


For the chicken marinate


1 chicken breast

2-3 tsp honey

Salt, to taste

2 tsp black pepper powder

7-8 rosemary strands, chopped

1 tsp orange zest


Other ingredients


3 tsp Oil

A dash of water (if required)

Cooked rice to serve the orange chicken


For the garnish


Roasted white sesame seeds

A small spring of rosemary


METHOD -


1. Marinate chicken breast for a minimum of half an hour. To marinate the chicken, prick the chicken breast on both side and rub salt, black pepper powder, honey, orange zest and rosemary and let it rest.


2. In a pan heat some oil and add the marinated chicken breast and let it cook in simmer on both sides. Make sure you cover it and cook of that the heat enters the center and cook the breast evenly. 


Also, the honey will start to caramelize so be careful not to burn it and add a dash of water if required to prevent it from sticking and burning.


3. Use a knife and a fork to check whether the chicken is cooked. It will take around 10-12 minutes to cook evenly. Let it rest for another 4-5 minutes in its heat once you turn the flame or heat off.


4. Serve with some rice or salad leaves of choice and indulge garnishing with white sesame seeds and rosemary spring.


Note - Use only the outer part of orange zest and not the white part because it will make the recipe bitter. Also, I have use kinnow zest as kinnow were in season when I made this recipe. You can use even lemon zest if oranges are out of season.
