Honey soy sweet potato salad with beetroot | Glutenfreewhisk

 This next super tempting and amazing salad is this beauty. The beetroot, sweet potato salad with bell peppers in a sweet soy sauce dressing. I was not sure what should I call this salad because I wanted to do justice to all the amazing ingredients in this salad. I finally decided to name it honey soy sweet potato salad with beetroot. All the ingredients together is an amalgamation of good taste and tempting flavors, no matter what you name this salad, you have to try this one.

Sweet potatoes are an ideal replacement of potatoes. I personally love both potatoes and sweet potatoes that I eat them regularly. I have even made an amazing beetroot, carrot & potato salad with paneer and pickled onions. If you are finding it difficult to get good sweet potato, then you can try this salad. But these days you get almost all vegetables round the year, so don't wait and indulge in this perfect salad meal.

I have roasted my sweet potato and bell peppers in oven, but you can do that in a pan as well. Saving gas seems like a necessity these days so make healthy, fulfilling meals in an oven with just two simple steps. Fixing a meal in oven with perfect salad recipes is what everyone should do during these LPG crisis time and since summers are here early bless your gut with good and light meals. 

Rosemary adds to the taste when added with sweet potato as this combination is great, so I will not say rosemary is optional because you easily get it online now and you can even have your own small plant. It is quite a healthy ingredient to fight inflammation and have good oils. You can choose Go vegan dried rosemary leaves to add in your salad If you don't have fresh one. I have used fresh in my salad recipe this time, but this dried rosemary is good option.

A lot of people choose to consume bell peppers raw, but I personally am not big on eating raw vegetables and I don't recommend you do that. If you do not have time skip that ingredients all together or make a simpler salad like carrot salad where you can even choose to eat raw garlic if you don't want to roast it a little. Raw garlic has its own benefits, and it is recommended to eat it raw as well empty stomach first thing in the morning if you can. Bell peppers are so dense in nutrients specially vitamin C, A, beta carotene, folate, potassium and are super beneficial for your eyes, skin, stomach as they have high water content as well. Adding them to your diet is only beneficial and cooking them lightly or tossing them in pan for a few minutes just add to flavors and helps the nutrients get absorbed better.

Soy sauce adds so much flavor and body to this salad. Any salad dressing with soy sauce and honey together is just perfect. You don't need anything else when these two ingredients are together. Also, I have not added any salt in the dressing because for me the salt while roasting the sweet potato and bell peppers is enough. If you think you want more salt, then add it to your dressing as to your taste.

INGREDIENTS - 


2 sweet potatoes, cut in round

1 beetroot grated

Less than half Yellow bell pepper

Less than half Red bell pepper

4 cloves of garlic, chopped

5-8 strands of Rosemary, chopped

Salt, to taste

6 tsp Oil

1 tsp roasted cumin powder

Mint leaves, chopped

Coriander leaves, chopped


For the sweet salad dressing 


3 tsp Honey

4 tsp Soy Sauce

1 tsp Black pepper


METHOD - 


1. Pre-heat the over at 180 degrees Celsius. Grease baking trays with oil. In one tray add the chopped rounded sweet potato with 3 chopped gloves of garlic and chopped rosemary. Spread 4 tsp of oil over it, salt to taste and 1 tsp roasted cumin powder and rub everything together. In another greased tray spread chopped yellow and red bell peppers. Add 1 chopped garlic to it. Add some salt, rub it all and let them bake in the oven for 30 minutes or until everything is soft and cooked.


2. To make the dressing, take soy sauce, honey, and black pepper, mix it well.


3. Assemble the salad, in a bowl add the baked bell peppers, sweet potato, chopped mint and coriander leaves and grated beetroot. Pour in the dressing, toss everything up. Serve immediately garnishing with some mint leaves and indulge.


Note - If you want you can even add marinated and cooked tofu, paneer or chicken to add protein to your salad bowl and make it a complete meal. Even if you eat just like that like me, you will absolutely love this salad recipe. Also, as I have mentioned in the description above, you can even pan cook the ingredients instead of using an oven.
