Sweet potato Halwa | Glutenfreewhisk
Sweet potato halwa sounds really different and thinking of it as a dessert may not be everyone's cup of tea but this recipe which is quite trending is really worth a try. Since sweet potatoes are naturally sweet, for me imagining it as a dessert seems fair and this halwa recipe was delicious.
I have made this halwa twice and both times it was just amazing. No doubt this requires a lot of your patience, as after boiling the sweet potato you have to roast it a bit in a good pan to elevate the flavors. I personally prefer not boiling the sweet potato but for this sweet potato halwa recipe I have made it by boiling the sweet potato. As you have to be careful not to make is mushy while pressure cooking as not over cooking it is important. I prefer cooking my sweet potato on a pan with ghee and then mashing it. I don't prefer pressure cooking it as a lot of natural sweetness and flavors are leached out and I don't like it. I will share pan roasted sweet potato halwa too someday.
Gajar ka halwa, besan ka halwa, moong dal halwa are all very common and are eaten in winters like a compulsory eat thing as soon as winters arrives and are about to end to get the best of the season. But make this halwa and you can indulge in it whenever you want as this amazing vegetable is wondrous to your health and people in their weight loss journey or people choosing to eat healthy to stay fit this is just a perfect halwa recipe.
Sweet potato is a gem with many health benefits. If you are eating the savory version of sweet potato then pan roast it with ghee, garlic and rosemary and you will eat this daily. INGREDIENTS -
3-4 medium size sweet potato, boiled
Jaggery, to taste
1 tsp green cardamom powder
Few strands of saffron soaked in a little warm water
3 tbsp Ghee
Mixed chopped nuts and seeds
METHOD -
1. In a pan add some ghee and roast the nuts and seeds of choice. Once done set aside.
2. In the same pan add the remaining ghee and add mashed boiled sweet potato and roast it. Keep the flame high and then low allowing it to roast gradually.
3. Once done add the jaggery and allow it all to melt. Let the halwa cook again so that it is in good consistency and all the water from jaggery is evaporated.
4. Finally add the green cardamom powder, saffron water with saffron stands and roasted nuts.
5. Mix well and serve hot garnishing it with some roasted nuts. Indulge.
Note - As all halwa are made with good quantity of ghee make sure you add it well according to the requirement of halwa. The sweet potatoes are dry in texture so be generous with ghee. Take a good pan in order to avoid it sticking to the pan but even if it sticks just simmer the flame and use a silicon spatula to scrape it out of the bottom. This roasted layer tastes even better.
