The viral retinol salad has to be a part of my month-long salad series. I have to start my salad series with this amazingly easy and super tasty side salad that can even be eaten as a light meal. This salad has been a regular. It is so amazing that if you make it once you will make it again and again.
In the internet you will find people not roasting the garlic in oil but I like my garlic to be cooked and roasted as it spreads the flavor in oil and makes the salad tastes even better. You can do it my way or the internet way but either way this salad recipe is a must try.
This salad is called the viral carrot salad for a reason. The combination of the ingredients, the nuttiness of soy sauce, the sweetness of honey, the crunchy and nutty toasted sesame seeds, the softness and the bite from carrot with its natural sweetness and the garlic just binds it all with a zing.
The goodness of carrots being rich in Vitamin A, beta carotene and fiber makes it a natural source of retinol that not only boosts your skin glow and over health. It does wonders for your eyes as well. Hence, this carrot salad is also known as the viral retinol salad.
With my salad series I realized that salad is actually not always about Lettuce or uncooked greens, but it is a lot more. Salad can be made a complete meal by adding protein, fat, carbohydrates to it with the fiber that it is mostly rich in. Always opt for cooked salads than raw ones with a few exceptions. But I am sure after following my salad series you too will love salads to its core and every once in a while, eat it as a detox meal blessing your system.
Eating the carrot salad as a meal will be a great way to give your body the required detox from your regular food choices as it is light on your stomach with right amount of fat and vitamins with fiber. Or eat it as a side salad to enhance your meal experience. Just the chopped onions, cucumber and tomato that we are served in the restaurants with our palak panner, malai kofta is not salad just chopped vegetables. Eat salad because you love salad not because you have to.

In my salad series for the month, all the salad are simple and easy to make with wholesome ingredients and amazingly different dressings for salad. I love some hint of sweetness in my salad but after my salad series I have realized that salads without a sweet note are also addictive equally. INGREDIENTS
1 tbsp oil, any neutral oil
3-4 cloves of garlic
2-3 medium carrot, shredded as long ribbons
1 tbsp roasted pumpkin seeds
Half a tbsp roasted white sesame seed
2 tsp soy sauce
Salt, to taste
Honey, as per sweetness required
METHOD -
1. Cut or shred the carrots ribbon like and keep aside. In a pan add olive oil or any other neural oil. Roast the chopped garlic lightly and turn off the heat.
2. Transfer this to a glass bowl, add honey, soy sauce, roasted pumpkin and sesame seeds. Mix. Add salt to taste and the ribbon like carrot to the bowl and toss it all well so that the sauce coats the carrot well.
3. Garnish with sesame and pumpkin seeds and serve immediately.
Note - You can use sesame and pumpkin seeds without roasting as well but I prefer my garlic to be roasted, and the nuttiness of seeds comes out better once you roast it. A peeler works just fine shredding the carrot ribbon like. You can check this 2 in 1 peeler that is durable as is made of stainless steel and is economical with multipurpose. Which will come handy for my salad series for the whole month.
