Sweet Potato Salad with lettuce | Glutenfreewhisk

Salads can be a meal saver when you haven't thought or planned your meal, and you are stuck as what to eat. They are healthy and can be a quick fix by popping any ingredient available with you with a basic dressing that goes almost with all salads. The basic sweet dressing that I have used in this recipe below is real game changer with no bad fats and just basic ingredients available at home almost every time. For my salad series for the whole month, I am presenting another favorite salad of mine that I make a lot when sweet potato and lettuce are in season.

Two years back I grew some amazing Lettuce in my kitchen garden, and I ate this salad on repeat with variations like on some days I added paneer to it, some days I added carrots with some cheese slice, but the constant was sweet potato and mushrooms. Making a vegan version of sweet potato salad is also easy. Replace paneer with tofu and ghee with olive oil and you will get a dairy free vegan version of my sweet potato salad. If you are a regular salad eater I will suggest you choose and add cooked vegetables instead of raw as it can be difficult for your stomach to digest the raw food and lead to bloating. Especially spinach, beet greens, chard, if eaten raw is high in oxalate that leads to discomfort so one should make changes if it is troublesome for you.

I have chopped my sweet potato and carrots in round shape as it is easier that way to get think slices that cooks faster. You can choose to chop them as you like. The freshness of mint and coriander and the crunch from the seeds goes really well in this salad. I happen to add roasted cumin powder in my salads like a true Indian. But I really can't help it as I love its taste in everything savory or a mix of sweet and savory.

I have used the skin of the sweet potatoes as the health benefits of the skin are numerous. The season's sweet potato are really nice, sweet, clean and the skin too is usable. It is rich in fiber, maintain bowel movement, control blood sugar and is also rich in vitamins and antioxidants. So, whenever the skin is clean without any blemishes use it.

INGREDIENTS - 


Handful of lettuce

2 sweet potatoes, sliced in round

5-6 small tomatoes sliced in quarter

Half a carrot

3-4 chopped button mushrooms

1 tsp pumpkin & sunflower seeds each

3 tsp oil to roast vegetables

some fresh mint and coriander leaves, chopped


For dressing -


5 ml water

10 ml apple cider vinegar

salt to taste

2 tsp brown sugar

half a tsp black pepper powder

half a tsp roasted cumin powder


METHOD - 


1. In a pan roast the carrots and mushroom with a little oil. In the same pan add a little more oil and roast the sweet potatoes until soft and golden brown. Set aside.



2. For the dressing take the apple cider vinegar and water. To it add sugar, salt, black pepper, roasted cumin and whisk it well until the sugar dissolves.


3. In a bowl roughly tear the lettuce and keep aside.


4. Add the seeds, chopped tomatoes and mint and coriander leaves to the roasted vegetables. Now add the dressing to this and mix it all up. The dressing should cover all the veggies nicely.


5. Now pour all this over the chopped lettuce and give it a final toss. Garnish with some mint spring and serve immediately.


Note - You can add a little salt while roasting the vegetables that will speed up the process but be careful to add salt accordingly later in the dressing. Wash lettuce in cold water to keep it fresh. You can even replace sugar with honey.
