 Soy sauce in salads just works like magic. This last salad on my March salad series is similar to the viral carrot salad recipe. The only replacement is the vegetable. Carrot replaced with cucumber. This too is so addictive like the carrot salad that you will make it again and again. Super simple salad recipe that is best salad idea for the summers. Serve it as a side salad or eat it as a meal when you are trying to eat healthy salad meals. Perfect for people who are in their weight loss journey.

Another tip for this cucumber salad that I would like to share is to be careful while adding salt as soy sauce has a natural saltiness so taste before you add salt or even sugar for that matter because you don't want your salad to be very sweet or salty. Make it balanced and you will achieve it only after you taste it first.

INGREDIENTS -


1 cucumber, peeled and sliced in rounds

1 tbsp white sesame seeds

honey, as per your taste 

5-6 tsp soy sauce 

salt, to taste

1 tsp roasted cumin powder

3 garlic cloves, chopped

2 tsp neural oil of choice



METHOD -



1. In a pan take oil and roast chopped garlic. Now add white sesame seeds and roast it lightly. Turn of the heat and add soy sauce, honey, roasted cumin powder, salt to it and whisk it.



2. Once combined, add the cucumber, I have sliced then in round because it releases little water this way. You can grate it, or shred it as long ribbons but make sure you squeeze out extra water.



3. Mix everything up and serve immediately garnishing with more sesame seeds. Indulge.



Note - You can choose to keep the skin of cucumber intact. I tried but didn't like the texture or the mouth feel so I have removed the skin for my recipe. Except for a few slices just for the color.
