Crispy potato, roasted beetroot, pickled onions and the creamy paneer. This is how I would like to describe my next salad. Wholesome and indulgent. I personally am not a fan of pickled onions or onions altogether, but my recipe of pickled onions is just too good to skip. I only enjoy pickled onions when I make them at home or pickled onions served in Langar in Gurudwara are something that I can eat occasionally without complain. Mostly, everyone loves sirke wale pyaz, especially North Indians, so add it as much as you like.

This salad is a mix of carbohydrates, fiber, protein and a lot of minerals as every ingredient has its own goodness. That's why eating salads is in itself a complete meal when made with care and right ingredients. For this crispy potato salad, you can make yourself a separate salad dressing with apple cider vinegar, salt, sugar, and water as well, but I am using the same brine like water in which I have soaked or pickled my onions. These best part of this brine is the taste of nigella and fennel seeds and the strong aroma of these two just adds to the taste. For me this sweetness and salty taste was enough, but you can always add more.

My salad series has been a great addition to my cooking and baking skills, and I did not realize until now that salads can be so good and refreshing. They are quick meal fix and there are so many variations and possibilities that you can have to your meals. My quinoa salad bowl recipe is another tangy yet refreshing salad meal that you can heave packed with protein and fiber. It works magic for your digestion and gut. My black chickpea salad with yogurt is another great meal that is so good, so Indian and so addictive.

A lot of potato salad recipe are available online and the most famous one is a creamy potato salad or potato salad recipe with egg is an old classic salad version that is loved by many. But for all vegetarians this crispy potato salad recipe is way better as it is comparatively lighter and paneer do wonders in terms of taste and protein requirement. This no-egg potato salad is no less than any other creamy potato salad recipe.

For my potato salad recipe, I have used sunflower seeds for that extra good fat and to add a crunch element to my recipe. Sunflower seeds benefits are numerous from reducing inflammation to controlling blood sugar to providing good fats, protein and vitamins. I have used Go Vegan sunflower seeds as they are non-GMO and really good and affordable.

If you are looking for some good glass bowls to toss your salad in I personally swear by Cello zenith round bowl, that are microwave safe and are in good size. Perfect to make and mix salads. They are quite handy otherwise as well for storing and heating food as they are microwave safe.

Another tip, you can even replace regular potatoes with sweet potatoes or try my sweet potato salad with lettuce, a regular for me for so long or Honey soy sweet potato salad with beetroot is one of my favorites and a must try.


INGREDIENTS - 


1 potato, peeled & cut in round

1 beetroot, peeled & sliced in round

half a carrot, grated

Handful of mint leaves

Pickled onions, as per taste

3 tbsp crumbled fresh paneer

Salt

2 tsp black pepper powder 

2 tbsp sunflower seeds

2 tbsp Oil, to pan roast potatoes & beetroot

2 tbsp olive oil

2 tbsp brine of pickled onions


METHOD - 


1. In a pan add oil and roast potatoes once crispy on both sides. Sprinkle salt and black pepper powder over them while roasting. Set aside. In the same pan add more oil and roast sliced beetroots similarly.


2. To assemble the salad, take Olive oil, pickled onions brine in a bowl. Add the roasted potatoes, beetroot, pickled onions, paneer, carrot, mint leaves, sunflower seeds and give it all a good mix.


3. Serve the crispy potato salad garnishing with mint leaves and indulge.


Note - The pickled onion brine contains water, apple cider vinegar, sugar, salt, nigella seeds and fennel seeds. If you are using regular sliced onions, then you can add all this to your salad. Check the recipe of pickled onions here.
