Lychee blue pea sago drink | Glutenfreewhisk

 I am not a fan of drinks except for coffee (cold, hot, basically any kind of coffee) and a few others, and I avoid carbonated drinks 100% even soda water or sparking water or tonic water because these just don't work for me. But after making these few amazing summer drinks where I haven't used any soda but still these drinks taste amazing and so refreshing. For instance, my recipe for lemon mint iced tea, where I have used cold brewed black tea leaves and have kept the recipe really simple and easy to be made regularly even at home. Lychee blue pea sago drink is another such amazingly tasty summer drink with summer fruit litchi, and the use of blue pea tea gives it the benefits of not only good antioxidants for health benefits but also a great color.

So, as promised here is another amazing lychee drink with sago pearls and this beautiful shade of purple with pink is so tempting that you will take seconds admiring the drink before consuming it. I have shared another amazing lychee drink last month and it is becoming really difficult to choose which one is tastier because they are simply refreshing and amazing. This is episode 27 in my summer recipe series and lychee is again on the charts. This is my second recipe using lychee fruits. Although I wanted to make so many more summer recipes using lychee, but monsoons are here and I don't know for how long I can share summer recipes but as I said earlier, I will carry on with my summer recipe series a little longer than expected because there is so much to make and share. So, for lychee fruit this summer season I am sharing these two banging lychee drinks without alcohol. Lychee green tea summer drink and lychee blue pea sago drink. A lot more for next year with more spice and flavors.

Lychee is naturally such a sweet and flavorful fruit as it has a distinct yet enriching sweetness and flavor that just hits the right spot. And yes, it is difficult to stop at just a few litchees while eating them and you go on and on. And this drink is exactly the same, it is sweet, it has texture and it has simple, mild flavors. The slightly pink soft and chewy sago pearls are my favorite. Although, I have boiled them twice but still they remained intact and they turned out to be great. And I will share the same way to boil them twice and use them.

I didn't soak my sago pearl for few hours for this recipe because I have had a blunder in the past with over cooking and making a mess getting sticky sago pearls. Thus, I boiled them twice, and this worked just fine for this recipe. I will be sharing the same process, but you can soak the pearls for a few hours say 2-3 hours. Then you boil them for a few minutes and let the sago pearl rest soaked to get that flavor seeping in and they turn translucent.

If you want to buy sabudana or sago pearls, you can check these Sachasabu tapioca sago or sabudana pearls. I have used the same. No alcohol, simple and easy lychee drink recipe with fresh lychee. Do try and indulge sipping it.

INGREDIENTS - 


4-5 Pitted lychees, chopped

3-4 tbsp Sago pearls

8-9 Blue pea flower

3 cup water

Juice of 1.5 lemon

1 tsp dried mint leaves

Honey, to taste

half a tsp lemon zest

2 whole pitted lychees for garnish


METHOD - 



1. Wash and boil the sago pearl in water. The water should be double the quantity of sago pearls used. Boil for 3-4 minutes.



2. In the meantime, boil blue pea flowers in water and allow the tea to cool a little. Take 1 cup blue pea tea and add it to the lemon juice. You will instantly see a change in color from blue to pink. Now strain the boiled pearls and add them in this pink tea. Add a little honey, mix, cover and let them soak for overnight. I have kept these in a refrigerator because it was very hot outside and I didn't want to spoil them.



3. You will see the sago pearls have become translucent and absorbed tangy, sweet flavor. If you still think these pearls are not cooked yet you can boil them again with the same liquid they are soaked in until soft and translucent. Allow them to cool completely.



4. To assemble the drink. Chop lychees roughly, add lemon zest, dried mint leaves and mash them a little using the sweet tangy pink, blue pea tea made to soak sago pearls.



5. Pour this in individual serving glasses, followed by all the sweet, tangy pink tea halfway. Rest halfway fill up the glasses with blue colored blue pea tea.



6. You will see a beautiful pink and purple shades in the glass with sago pearls at the bottom. Garnish with a whole pitted lychee and indulge.



Note- You can use nutmeg powder as well in this drink. Use chilled blue blue pea tea to enjoy this summer drink to the fullest.
