Mango Piyush, A Maharashtrian drink | Glutenfreewhisk

 I have heard about this drink in a few food interviews with celebrities for magazines and food blogs and I though it must be something difficult to make. But when I saw the recipe posted by Chef Sanjot Keer, I knew I have to give this amazingly witty drink a try. I am calling it witty because it is a mixture of shrikhand and Lassi and I am making it a mixture of mango shrikhand and mango Lassi, hence Mango Piyush. This is an absolute dreamy, creamy, delightful drink that not only quenches your thirst but make you want to have more and more of this creamy wonder. It is that rich both in flavors and consistency. Heavenly.

If you are someone who loves dahi or curd, milk, cheese and everything creamy then this drink is for you. You have to try this summer drink before mango season is over. I have a few more amazingly simple and summer friendly coming up before monsoon arrives. This is episode 26 in my summer recipe series and this mango piyush is an easy, summery drink from Maharashtra that you have to make. The process is simple and the ingredients are minimal. I am using Greek yogurt and regular curd both in the recipe, but you can choose either one of them or both like have. This mango piyush recipe is best enjoyed when had chilled and it is served without any garnish or add-ons but if you prefer then you can add some crunch from chopped nuts of choice on top. But trust me when I say that this rich drink requires no garnish. It is heavenly.

I have not only just made the most of mangoes this summer season I have also made the most of mango shrikhand and have used it in two of my recipes. After trying mango shrikhand at home myself, I realized that this simple dessert is not only a great way of enjoying fruit in dessert but also eat curd for dessert. Mango shrikhand is one of the simplest desserts I have tried which is so enriching and tasty that you can't stop eating it. For this exact reason, I have made it again and again and have used it in my Mango Basque cheesecake recipe which used the flavors of mango shrikhand and this mango piyush recipe where basically you are making mango shrikhand and mango chaas/ lassi and making a drink using both.

You can also add a little nutmeg in the recipe that I am sharing below but I avoided it and wanted to have it just the way I made it. This is actually the best time to try this mango piyush recipe because monsoons are not even here in North India and the heat is killing the good, happy vibe. But with good summer food recipes and summer drink, you will forget the heat. Creamy, velvety, rich, indulgent and addictive is what I call this mango piyush.

INGREDIENTS -


2 mango puree

300 ml hung Greek yogurt

8 tbsp regular curd

Water, as consistency required

Crushed saffron strands soaked in a little warm milk

2 tsp green cardamom powder

Condensed milk, to taste



METHOD - 



1. Take Greek yogurt and pass it through a sieve by rubbing it using a spatula. The goal her is to have a really smooth texture. Once the hung Greek yogurt is passed through the sieve, do the same with mango puree.



2. Now combine them using a hand whisk until smooth. Add condensed milk to taste and whisk again. Keep this bowl aside.



3. In another bowl take regular curd and whisk it. Add saffron milk to it followed by green cardamom powder. Now add water to this and whisk to make a lump free dahi water or chaas kind of texture. 



4. Now pour this chaas to the prepared mango Greek yogurt bowl. A little at a time whisking with a whisk regularly. Once combined you can adjust the consistency to your liking by adding more water.



5. Pour it in individual serving glasses and indulge. Refrigerate for a few hours and have it chilled.


Note - You can use regular dahi for the whole recipe instead of Greek yogurt. Garnish with a pinch of nutmeg powder or chopped nuts if you like.
