Layered colorful lattes and coffee are trending right now and why they are trending is for a simple reason they look so pretty, and they taste even better. One such amazing refreshing summer drink with coffee is this mango blue pea coffee that is both tangy, sweet, and since it has coffee, it is addictive. The layers speak for themselves. The yellow from mango, the beautiful shade of pink/purple of blue pea or butterfly pea when mixed with lemon and the beaten foamy coffee shade on top just amazing to look at. This summer drink with coffee is a must try.
I am using blue pea and storing it after sun drying it at home from 2 years now, but I haven't consumed it that much. Blue pea or Aprajita or butterfly pea flower has many health benefits, and the major one is that it is anti-inflammatory and has antioxidants making it a perfect non-caffeinated tea that you can enjoy daily. This drink of Aprajita tea with coffee makes me want to have this drink daily because it is actually really fun to drink this.

INGREDIENTS -
Half a mango, pureed
2 shots of blue pea tea
2 tsp lemon juice
1.5 tsp instant coffee powder
Honey, as per taste
3-4 tbsp warm water
For blue pea flower you can select Urban platter blue pea flower to brew the tea. As I have mentioned earlier, I am using blue pea flower from my kitchen garden.
METHOD -
1. In a glass take the mango puree and pour it first.
2. Now in a small bowl take the lemon juice and pour over the blue colored butterfly pea tea and you can instantly see the color turn to a nice shade of pink. Swirl it and pour it over the mango puree.
3. Now beat the instant coffee with honey and warm water. I am using curaa electric milk frother and it is exceptional when it comes to speed. You get the frothy coffee within seconds. Once done take a spoon and pour this sweet coffee froth over the blue pea tea.
4. The 3 layers that you can see are mind blowing and tempting in itself that you will be drawn to this amazing coffee.
5. Stir it using a straw and indulge.
Note - Add ice if you want. Also, after brewing the blue pea tea refrigerate it for it to cool before adding the lemon juice.
