Cherry dole whip with stevia | Glutenfreewhisk

 This recipe of cherry dole whip is inspired from the original dole whip recipe, which is lactose free, but I have used Greek yogurt in this thus it is not exactly dole whip but inspired from it. I would like to call my recipe a mix between dole whip and sorbet, so I don't know what to name it thus I am calling it a cherry dole whip because it is closer to dole whip. But it has dairy and is not lactose free. It is amazing to taste and a perfect summer recipe to indulge in.

Dole whip is like a soft serve ice cream made with natural fruit and coconut milk making it lactose free. For my recipe I have taken inspiration from it and have made my changes. Instead of coconut milk I have used Greek yogurt, and I have used frozen pitted cherries and have chosen to sweeten it with stevia. I have also added lemon juice. So, I am making both cherry dole whip with dairy and cherry sorbet with Greek yogurt. It is creamy, cold, tangy and really rich in flavors and texture.

This is episode 24 in my summer recipe series, and I am using the amazing summer fruit cherry. My summer recipe series has till now used many summer fruits with some great recipes. They are mostly desserts, but there are a few are a healthy meal option to indulge in. Grapes and cherries are my favorite fruit as well because there is headache when eating this fruit, all you have to do is pop it in your mouth. No juices pouring all over your hand, no mess of removing the outer layer by peeling or cutting just simple with sweet tangy taste. Cherries are rich in vitamin A, K, C, potassium, fiber and antioxidants. Cherries have many health benefits from skin health, bone heath, heart health and many more. So, add it to your diet. Make Cherry chocolate mousse to add fun to it and make a perfect healthy dessert out of it.

I am using stevia leaves from my garden but if you don't have it, you can stevia drops or stevia powder that is available in the market easily. Since I have never used those so I cannot recommend any product here. I have stevia plant in my garden from a really long time, but I have never used it regularly. The reason being it is super sweet, even a single leave just burst sweetness to such a level in your mouth, and it lingers. I always think of making a stevia concentrate, but I can't make myself do it. Now I think is high time and I will try and prepare it soon.

Stevia is magical for people with sweet tooth and suffers from diabetes. Even if this is not the case try replacing sugar/honey/maple syrup with this 1 plant that will do wonders for you in the long term. Diet conscious or weight conscious but to indulge in sweet treats regularly then make everything at home with stevia and indulge.

INGREDIENTS -



10-12 pitted cherries, frozen

Juice of 1 small lemon

4 tbsp desiccated coconut

4 tbsp Greek yogurt

6-8 stevia leaves, roughly torn

2 whole cherries, for garnish



METHOD - 



1. In a blender jar take pitted frozen cherries, desiccated coconut, Greek yogurt, lemon juice and torn fresh stevia leaves. Blend it to a fine smooth paste.



2. Scrap out the sides of the blender jar with a spoon to have an even smooth texture. Pulse blend to avoid excess heat production and then blend on high for small intervals like 15-20 seconds. It won't take a lot of time. A minute or 2 maximum.



3. Check the sweetness in between and adjust of required according to your taste.



4. Pour this back in a bowl with a lid and freeze for a few hours to allow it to set.



5. Once set, bring it to a pourable consistency by using a spoon and breaking any hard ice layer to get a creamy even texture. For reference check the video on my YouTube channel. Link below.



6. Serve chilled garnishing with whole cherries and indulge.



Note - Use any sweetener of choice. Honey or maple syrup will also be a great option.
