Coffee & mixed berries tofu pudding | Glutenfreewhisk

 Thinking of healthy desserts to satiate your craving but still feel guilt free then try this healthy pudding recipe. I am making creamy and healthy tofu pudding two ways. One is with coffee tofu pudding obviously and the second is with black grapes and strawberries or mixed berries tofu pudding. Both the flavors are bang on and it is a must try recipe. Last year I have made this healthy pudding with mango as well. Since, it is mango season you can give that a try as well.

Use panner or tofu it goes well with both. But today I am using tofu and making this silken tofu pudding at home that is super easy and a great way to eat desserts. Tofu pudding is generally made in a different way, where a ginger sugar syrup is made first and poured over silken soft tofu and enjoyed. But this recipe is the Instagram version of tofu pudding, and I had to try it. No doubt it is healthy and super easy to make. And since it is summer season and summer are at its peak so something cool to beat the heat after a meal is enticing.

All you need is a blender and the ingredients of choice. No cooking, no baking silken tofu pudding. I am using hazelnut filter coffee for this recipe. I have brewed it and have allowed it to cool down at room temperature. If you too are using filter coffee make a good, concentrated liquid. You can use Bevzilla instant filter coffee powder that makes a great hazelnut coffee. For the berries tofu pudding I am using black grapes and strawberries and trust me when I say this combination is better than the coffee tofu pudding. Coming from me who love coffee and will always choose chocolate and coffee flavor over anything. And when I say mixed berries is one percent just a little better than the coffee pudding then that means it is really good.

For the recipe I have soaked my chia seeds in whey because I had it extra and it adds a little tangy flavor to the recipe. Not to mention the health benefits of whey water. You can soak chia seeds in normal water as well. My chia seeds were soaked overnight and then kept in a refrigerator for a day because shooting my recipe got delayed because of the gloomy weather and poor light. But you can soak it overnight at room temperature and use it the next morning or a few hours like 3-5 hours will also do the trick.

I wanted to include this recipe in my summer recipe series, but I thought why just summers this recipe should be enjoyed even in winters. Since it tastes better when chilled or cold in a way this is a summer recipe or a summer dessert that is healthy and super easy to make. 

Use tofu both in sweet and savory dishes have become a constant at my home and I just enjoy it. I love added ingredients that I like to my recipes and for this tofu pudding recipe I have added soaked chia seeds just to make it healthier. The original tofu pudding known as Douhua is completely different recipe, which is an Asian dessert, but this version of tofu pudding is easy and for those who are not an expert like me in making Asian cuisine. INGREDIENTS - 



180 gm Tofu

10 tbsp chia seeds

100 ml whey water

6-8 Black Grapes, chopped

6-8 Strawberries, chopped

30 ml Hazelnut coffee shot

Honey, to taste


For Garnish -


Mint leaves 

Unsweetened Cocoa powder

Black grapes and strawberries, chopped



METHOD - 



1. To make mixed berries tofu pudding first, take half the tofu and half the soaked chia seeds in whey water in a blender. Add handful of mixed chopped black grapes and strawberries. Finally add honey to adjust the sweetness and blend to a super fine creamy texture.



2. To make coffee tofu pudding next, take rest of the tofu, chia seed soaked in whey water, coffee shot and honey to taste and again blend it all to a super fine texture.




3. Pour them in seperate serving dish. Garnish the coffee tofu pudding with unsweetened cocoa powder and mixed berries tofu pudding with chopped black grapes and strawberries. Finishing with a mint leaf.



4. Refrigerate for a few hours or overnight and indulge.



Note - You can skip chia seeds all together but in my version of tofu pudding I love these.
