 ABC smoothies are very popular among people and in cafes. So why not ABC salad. Apple, beetroot, and carrot with walnuts and tofu is a tangy, delicious and super healthy salad that you can eat as a snack, a quick bite, a side salad meal or a complete meal bowl. This lemony salad is instant and so indulgent that you will make it again and again.

High fiber salads are many but high fiber salads that are super tasty and easy to make without the worry of bloating is this ABC salad. The sweet and tangy flavors of this salad are such a balance that you will be addicted to this one. The crunch of the salad naturally from raw beetroot, carrot and apple is there but the goodness a d crunch that walnuts and melon seeds gives is an add on. Both in taste and nutrition. I have used dried mint leaves because as I have mentioned earlier I always have them in abundance at home, but you can use fresh mint leaves as well. The best part of dried mint is that they are full in flavor and freshness, and you can crush them as tiny or as powder like as to your preference that don't ruin your palette with sharp mint flavor.

Another great thing about this crunchy ABC salad recipe is that it is oil free and packed with vitamins, minerals, protein, antioxidants, good fats and many more goodness. Oil free salads feel dry to your taste buds but this salad which can be enjoyed as meal or as a side salad both will not make you feel like you are missing something. Rather it will make you feel enriched. Who does not love a guilt free healthy meal that is super crunchy, tasty even in its rawness.

INGREDIENTS - 


1 apple, deskinned and peeled as ribbons

1 beetroot, deskinned and peeled as ribbons

1 red carrot, deskinned and peeled as ribbons

1 lemon juice

100 gm crumbled paneer or tofu

3 chopped walnuts

2 tsp dried mint leaves

2 tsp white sugar powdered or to taste

salt to taste

1 tsp black pepper powder

2 tsp melon seeds


METHOD -


1. Coat the peeled and ribboned apple with half a lemon juice to prevent it from browning.


2. Now in a big bowl, take the peeled and ribboned carrot, beetroot and apple toss it together.


3. Now add chopped walnuts, melon seeds, dried mint leaves to it.


4. Take the crumbled tofu or paneer and season it with some black pepper powder and add this to the ABC bowl.


5. Finally add the juice of rest of the lemon followed by salt and sugar to taste.


6. I have kept it tangy with a little note of sweet. You can adjust the salt and sugar as to your liking. Give it all a good toss and serve immediately garnishing with more walnuts, some tofu or paneer for white color and dried mint leaves and indulge.


7. The high fiber, oil free ABC salad is ready to indulge.


Note - You can replace sugar with honey as well and dried mint leaves with fresh mint leaves. From all the crumbled tofu or paneer, keep some for garnish as while mixing or tossing the beetroot will give all its color to panner. So, garnishing with white tofu or paneer in the end will be good.
