Like I have mentioned earlier in one of my salad recipes that roasted cumin powder is a must in almost everything savory that I make as I love its flavor, it fragrance and I add it to my dishes a lot. In this salad recipe too, I have used it and I have loved it. You can choose to add red chili powder or chopped green chilies as well, but I do not consume or prefer chilies, so I haven't added them. Trust me this gut friendly salad is to be enjoyed with spices.

INGREDIENTS -
2 beetroots, grated
5 tbsp thick curd
1 tsp mustard seeds
1 spring curry leaves, chopped
2 tsp oil, for tampering
salt, to taste
2 tsp Roasted cumin powder
METHOD -
1. Grate the beetroot and set aside. Beat the curd using a whisk to remove any lumps and set aside.
2. To make the tempering add oil to the pan followed by roasted cumin powder, mustard seeds and curry leaves. Slightly temper them and set aside.
3. To assemble the beetroot salad, take the beaten curd, add the grated beetroot to it followed by the tempering and mix it all well.
4. Serve immediately garnishing it with mint and coriander spring.
Note - This salad taste best when eaten immediately. But even after you refrigerate it and consume it, it tastes good. But I will suggest that you make it fresh will cold curd and add tempering once it has cooled a little.
