This refreshing cucumber salad has just few ingredients like curd, pomegranate, mint, coriander and just salt and sugar to taste. One of the simplest and the best salad recipes that you can make. Eating mix veg raita or grated cucumber raita is something we all have done and have enjoyed it but this refreshing cucumber salad is taking the regular salty cucumber raita to another level. It can be enjoyed as a snack, a light meal or as a side salad. I have chopped or sliced my cucumber as ribbon because it gives a thin slice and noodle like feel while eating this salad. Also, I have removed the skin of the cucumber but if you like you can keep the skin of the cucumber intact. I personally don't like it, so I haven't kept it.

INGREDIENTS - 


1 cucumber sliced as ribbons
2 tbsp pomegranate seeds
1 and a half tsp brown sugar
salt to taste
4 tbsp thick curd / yogurt
handful of chopped mint and coriander leaves


METHOD - 


1. Slice the cucumber as ribbon using a peeler and squeeze all the water out of them using your hands and set aside.


2. In a glass bowl take the thick curd or yogurt, whisk it so that it is nice and smooth. Now add salt to taste followed by sugar and whisk it again until the sugar is dissolved.


3. Add the sliced ribboned cucumber followed by chopped mint and coriander and finally add the pomegranate seeds.


4. Mix it all up lightly and serve immediately garnishing with more pomegranate seeds and mint.


Note - Use thick curd else the curd's water will make the experience of eating this salad not that great. If you don't have thick curd, make sure you hang it at least for 3 hours. Also, make this salad fresh and eat fresh as after adding salt and sugar, it will make the salad have some water content and if you rest it after making it, it will again make it watery.
