Rice paper paneer stuff paratha | Glutenfreewhisk

 I have always loved having paneer paratha over aloo paratha. Although, I never used to eat parathas a lot before my food allergies and intolerances but still paneer paratha was my favorite. I love it because I add Kasuri meethi (dried fenugreek leaves) in it and this combination is insane. In my recipe today I am adding everything I like in my paneer paratha. After watching so many reels on this gluten-free super delicious versions of everything with rice paper, I have decided to share a few no-oven, no air fryer rice paper recipes that everyone can make and enjoy easily.

Yes, rice paper is a little stretchy while consuming it after you rehydrate it. But if it is crispy enough then you don't feel any stretch or chewiness. But for someone who don't eat gluten, I think rice paper is like a savior. There are so many amazing and easy rice paper recipes that you can make and enjoy them when you can eat a bagel or a paratha or a Danish because all these are made with refined flour and rice paper alternative make it so easy that you don't have to fuss about the right gluten free flour and psyllium husk measurements.

According to my mother I have added way too much filling in my parathas and they became so much fulfilling. And I found it funny but for a meal with just this paneer paratha I guess this much filling seems plausible. Because who loves scanty filling any paratha right? Also, I am sorry for this bad plating and no garnish, but I was out of ideas, and my brain was not just braining. And it was lunch time and all I wanted to do was taste the paratha than to plate it. 

This is my favorite paneer stuffing for a paratha and it is the best. Cheesy, with a sharp flavor of kasuri meethi and garlic and no chilis at all. Make this paneer stuff paratha for your kids and I am sure they will love it and ask for it again and again. I am not very used to handling the rice paper yet and I am new to rice paper sheets recipes because they are not available in my city and every time I order them online, I get cracked, broken sheet and I just hate it. But I am happy that I am sharing these amazing 5 rice paper recipe with you where you don't need any fancy air fryer or oven or anything. Just a good pan and all the required ingredients. I am rehydrating my rice paper carefully and I am using a brush instead of dipping and soaking them in a bowl of water because I don't want it to stick to my wooden board when I want to transfer it to the pan. Either way you have to be very careful and seal the sides well. Water helps to seal the sides just fine but to be extra cautious you can do a little side fold as well. I have placed the paneer stuffing in the center and am making my way out leaves enough space on the sides. As you will do it regularly you will understand how to work with rice paper with ease eventually.

INGREDIENTS - 



Half a block paneer, mashed

1 big garlic clove, grated

Salt, to taste

2 pinch black pepper powder

1 tsp kasuri meethi

1 tsp carrom seeds

1 tsp roasted cumin powder

Half a cheese slice, roughly torn

2 rice paper sheets

A little water to rehydrate rice paper

1 tbsp ghee



METHOD - 



1. First take mashed paneer, add salt, black pepper powder, roasted cumin powder, kasuri meethi, grated garlic, and carrom seeds to it. Mix it all well. Make sure your paneer is mashed well and does not have big chunks as it might cause the rice paper to have holes later.



2. Now carefully rehydrate the rice paper. I am using a brush and water and lightly wetting it as I don't it to be very soggy as it will be difficult to handle and will stick to the surface fast. Rehydrate one sheet at a time. And work fast.



3. Now spread this paneer mix over one sheet make sure you leave a little space on the side to stick the rice paper so that the filling does not comes out. Also, these sides will become crispy so they will give a give texture as well.



4. Roughly tear the cheese slice and place it over the paneer layer.



5. Quickly rehydrate one side of the second rice paper sheet and place the rehydrated side over the paneer filling. Use brush again and rehydrate the top side and seal the side as you go about it. Be careful while rehydrating this way as rice paper is delicate and might crack if not done carefully or if enough water is not used.



6. Carefully pick up the sealed paneer stuff rice paratha and place it over a hot ghee greased pan. Cook it on both sides until you get a crispy red golden layer. Because crispy parathas are the best. IYKYK. 



7. Slice it and serve it with some ketchup or spread of choice and indulge.


Note - Be careful while handling the rice paper sheets. If you want, you can dip them in water as well to rehydrate them. Use chili as you like.
