Rice paper mochi with plum | Glutenfreewhisk
For me the idea of have rice paper just like that after rehydration seems really weird at first, but it is good. It is a little chewy but not bad at all. And for many out there this must be the case with you as well. I am not a fan of raw food, and this feels like raw, but it isn't actually and surprisingly it works. This rice paper mochi recipe is definitely a healthier version of dessert for sure. For someone who loves to eat dessert on a daily basis, this is actually healthy. The Greek yogurt, which has lower lactose content and higher protein content than the regular curd with some fresh chopped fruits and no added sugar really makes this recipe a healthy option and a unique way to eat fruits as desserts. The sprinkling of white sugar on the top is optional, totally. It is only done to make the handling of rice paper easy as it gets sticky and stretchy after rehydration. I have used a very little quantity of dusted sugar because I am still not a pro handling rice paper yet and I am learning along the way.
A little handling tip for this rice paper mochi recipe is that I kept my mochi in the freezer for like half an hour before slicing it, but it required a little more time than half an hour to set well. So don't rush like me, be patient if you want it to set well and not spill. Also use hung Greek yogurt for that even richer consistency. You don't have to freeze the mochi but set enough so that the content does not spill out while slicing. Also, use a very sharp knife, then even 20 minutes of the prepare mochi in the freezer will do the trick.
Mochi is a Japanese rice cake traditional made with short grain glutinous rice that makes it chewy, stretchy. A dough is made using this glutinous rice which is ponded and then is uses in sweets or desserts. This rice paper mochi is a similar and easier version of the traditional mochi which is definitely time consuming and I am sure requires expertise and a lot of practice. I am happy that I tried this simpler version of Mochi with rice paper as it is stretchy, chewy, a little sweet and tasty for sure.

In my recipe I am again rehydrating my rice paper with a brush because I don't want it to stick a lot. You can use a plate or a bowl of water bigger than the rice paper and dip you sheet for a few seconds and then use it. I am still getting used to handling rice paper, so I am going about it my way. Also, the use of cinnamon can be made optional, but I love it and cinnamon goes really well with yogurt and fruits. Basically, with everything sweet it works magic. To make this rice paper mochi recipe vegan with being gluten-free, use vegan curd like coconut flavored vegan yogurt or curd as it will go great in this recipe.
INGREDIENTS -
50-70 gm natural Greek Yogurt
2 plums chopped
4-5 tbsp pomegranate seeds
4-5 dried black raisins, chopped
2-3 pinch cinnamon powder
Powdered white sugar, for dusting
1 Rice paper
Water to rehydrate rice paper
METHOD -
1. Rehydrate the rice paper using a brush and water. Don't rehydrate a lot directly as it will stick to the plate and it might tear.
2. Place it over a bowl so that it gets the space of the bowl on the inside when you add the filling. The bowl should not be very big.
3. Now start layering the rice paper with Greek Yogurt, a few spoons at a time (2-3) followed by chopped plums, pomegranate seeds, chopped dried black raisins and dusting cinnamon powder and repeating all this one more time. Finally topping it with Greek yogurt 1-2 spoons.
4. Fold carefully and carefully transfer it to a plate which is lightly dusted with powdered white sugar. Now place this in the freezer for 20 minutes or so for it to set a little. You don't want it frozen but just set so that you can handle it well.
5. Dust both sides a little more, slice with a sharp knife and enjoy this chewy stretchy quicker version on Japanese Mochi and indulge.
Note - Make it with any fruit of choice, flavored Greek yogurt of choice. Coffee or matcha flavored mochi will be amazing as well.
