Kiwi sorbet recipe with hemp seed masala | Glutenfreewhisk

 After making an amazing peach sorbet recipe, I am kind of addicted to sorbets because they are so rich and creamy that I had no inkling earlier that sorbets are so amazing. They are nothing like slushies or barf ka gola because I am not a fan of both. I have had both, but these sorbets are different. They will not make you feel like you are eating sweet ice, but you can actually taste frozen fruit that is so creamy that sorbets have become my new favorite. Especially with the tangy flavorful masala on top, it is a game changer.

For my kiwi sorbet I am using white sugar in the recipe, because I want that amazing green color of kiwi to remain. Brown sugar or honey will change the color and make it darker, so I decided to make my 2-ingredient kiwi sorbet with white sugar. The chatpata masala to sprinkle on top as garnish this time has hemp seeds in it, and this is definitely the best. For my peach sorbet recipe with a tangy masala, I have kept the masala fairly simple with just few ingredients. This time with kiwi sorbet, it is basically the same ingredients but for a change and flavor I am using bhang ke seeds or hemp seeds. 

I have used bhang or hemp seeds and have shared one amazing and my personal favorite bhang ka namak recipe that I have learned from one of my ex-colleagues. The idea of making a flavored salt which is very common in Uttarakhand and even Himachal Pradesh is something I adore about the food in the mountains. This salt is an everyday thing and is eaten with meals, fruits, sanna hua nimbu and with many more things and I just love how flavorful and beautiful this recipe can get with variations. And no after roasting the hemp seeds there is no intoxicating properties in it, and it will not make you high.

Health benefits of both kiwi and hemp seeds are tremendous. Kiwi is rich in fiber, vitamins C exponentially with anti-inflammatory and antioxidant properties. On the other hand, hemp seed or bhang seeds have many health benefits like these are high in protein and essential amino acids with good fats and are great for your gut and your skin health. Hemp seeds are also anti-inflammatory thus making them a great choice of healthy seeds to add to your diet especially during winter season.

Every time my dad gets a new fruit I try to make at least 3 recipes out of it. Sometimes even more but mostly 3. And with kiwi fruit, I have made 3 amazing and very difficult recipes as well. Cucumber kiwi salad with red grapes and healthy kiwi spinach smoothie with gond katira. all these three recipes are so different and the kiwi fruit with its natural sweetness makes the recipe taste so better with a very little needs to add additional sweetener like honey.

The bowls that I swear by are both microwave and dishwasher safe and have a lid that makes my work easy. The Cello Ornella toughened glass mixing bowl with premium lid are the best pick for this recipe. Because covering the sorbet while freezing is very important step. Because you want a creamy texture not a crystalized ice feel. You can easily get hempseeds in supermarkets or markets in Uttarakhand. These are also available online and if I am buying online, I prefer using India Hemps organic hempseeds and these are good.

Kiwi works as a great garnish fruit as well. If you have no clue as to what to use as a garnish or serve a dish with something refreshing on the sides, fruits always come to the rescue and similarly kiwi fruit has helped me in garnishing a plate up to the mark (at least for me). Do try this easy recipe with kiwi and indulge.


INGREDIENTS - 


For kiwi sorbet


1 and a half kiwi, frozen

Powdered white sugar, to taste


For tangy hemp seed masala sprinkle


1 tbsp Hemp seeds

Half a tsp Chaat masala

Less than half a tsp Black salt

Less than half a tsp Salt

Less than half a tsp dry ginger powder

Half a tsp Powdered white sugar

Half a tsp Roasted cumin powder


For garnish


A Tulsi sprig



METHOD - 



1. To make the kiwi sorbet, freeze chopped and deskinned kiwi for overnight. The next day blend frozen kiwi with Powdered white sugar in a blender.



2. Blend and pulse blend it occasionally and scrape the sides of the blender after every few blends and pulse blend. Check the content and don't over blend as it will lead to heat production.



3. Once you reach a smooth run by consistency. Pour it in a bowl with a lid again and freeze again overnight.



4. To make the hemp seeds masala sprinkle, first dry roast the hemp seeds in a pan. Once cool, blend them to a fine powder. Use only the fine powder part. Rest you can use for some other recipe.



5. Now mix all the above-mentioned masala sprinkle ingredients together and set aside.



6. The next day, take out the frozen sorbet bowl from the freezer and let is rest for 10-15 minutes so that it becomes easier to scoop it out.



7. Take scoops of amazing green kiwi sorbet, dust the prepared masala sprinkle generously, garnish with a tulsi sprig and indulge.


Note - To make the masala sprinkle you can use red chili powder as well, but I don't like red chilies at all and I have skipped it. Add a good sprinkle of masala on top while serving your kiwi sorbet as it really adds to the experience and taste of eating a sorbet.
