Making a sweet breakfast is always fun. I know a lot of people will say this is not a healthy way to start your day, but I really like to start my day by having a breakfast that I want with my coffee. I have very limited options to have for breakfast because of gluten intolerance, yes, I do make variations using those limited ingredients like oats, egg, poha and besan. But still they are limited and I do not want to eliminate sugar from my diet completely. Now that I am using Amaranth seeds also, I have another sweet breakfast option added to my breakfast list as making amaranth porridge is really quick and easy breakfast to fix. I saw a similar recipe of Martha Stewart on Instagram with quinoa, and I knew I have to try making a sweet version of quinoa now. I have always eaten quinoa as a savory food except for a few salad recipe where there is a sweeter note to it, because of the dressing and my sweet quinoa fruit salad recipe, which is another sweet recipe, but this is for the first time I am making sweet quinoa porridge recipe.
With people choosing to be vegan and gluten-free these pseudocereals or millets have gained a lot of traction over the years. And honestly, I have included quinoa in my diet from past 2 years now. I was not even aware of it before that. And for Amaranth seeds or Rajgira seeds I have included it in my diet just a couple of months ago. I was aware of this ingredient but never tried it. I think there are a lot of people like me who want to make change to their diet but are contemplating and procrastinating thinking let it be. I am good. But trust me when I say this that these ingredients do make a change. It is not a rich thing, or it is not an expensive habit to put your health first.
Millets have always been there in India but still we choose to focus on wheat because it is an idea from the west and we made it ours with roti and now there is no going back. Again, I will say I love South Indian and their love for millets, coconut, natural fermentation, jackfruit and basically everything South Indian when it comes to food.
For my creamy quinoa porridge recipe, I am using honey as a sweetener because honey adds taste to everything sweet when it is used as it has its own taste and I like the honey my father gets for me from a local place nearby and it tastes really good. Also, I am using store-bought coconut milk instead of regular milk because I wanted to make this amazing quinoa breakfast recipe vegan and lactose-free and it is naturally gluten-free. You can even use almond milk or oat milk depending on your choice. This vegan quinoa porridge recipe is a must try as it is rich in healthy fats, antioxidants, protein, fiber and so much more goodness.
You can choose Urban platter unsweetened coconut milk or cocomagic coconut milk or make your own coconut milk at home. I always use yoga bar quinoa which is clean, high in fiber and rich in protein. Also, the buy 1 get 1 offer is too tempting to ignore.

INGREDIENTS -
1 cup Quinoa, washed
Honey, to taste
100-120 ml Coconut milk
50 ml Water
A pinch of salt
1.5 tsp Cinnamon powder
For garnish
1 tbsp desiccated coconut
Some chopped almonds
A few dried black raisins
METHOD -
1. In a pan add washed quinoa with the water, cinnamon powder, a pinch of salt, and coconut milk and let is cook by covering the pan.
2. Once the quinoa is cooked 80-90% add honey or any sweetener of choice and cook it completely.
3. Once done and as per your desired consistency serve hot garnishing with desiccated coconut, chopped almonds and dried black raisins.
4. Your vegan and gluten-free sweet breakfast with quinoa is ready. Indulge.
Note - If you use overnight washed and soaked quinoa then the cooking time reduces even more and you get a great smooth texture with your breakfast ready within 5-10 minutes. Add sweetener of choice once the quinoa is almost done and not earlier.
