Potato, Carrot, and Egg Pancake | Glutenfreewhisk
Breakfast ideas can be really tough. Eating same things daily makes it quite boring at times. And if you cannot eat a lot of things because of your food intolerances or allergies then it becomes really tough to think of an easy yet quick breakfast recipe.
My go to breakfast recipe is this Potato, Carrot and Egg pancake recipe. It is simple, it can be changed with other ingredients like sweet potato, bottle gourd, Zucchini or any other vegetable of your choice. I have also tried it with just potatoes, potato and bottle gourd mixture and potato and oats mixture. But my favorite combination is potato and carrot one and I am sharing its recipe with you below.
I end up eating this thrice a week and it is really addictive. When I don't have any vegetable other than potato, I even use oats. The process is same, but the cooking time is way less. This version is crispy because the roasted oats turn brown and crisp, but it sometimes can feel dry. Although I enjoy it but for some this might not work. Another regular is to make just a potato pancake, its juicy, crispy yet soft. Eat it with cheese and egg, you will thank me later.
For this potato carrot egg pancake recipe patience is a virtue and giving it time to cook well and flipping it without breaking will come with using a good, greased pan, preferably non-stick, some practice and patience. And even if it breaks it can be fixed to a certain extent. Having your protein and starting your day with a full meal with protein, carbs, good fat from seeds, and the vitamins in carrot with a perfect cup of tea/coffee will make your day.
And for all those who keeps on saying they are running out of breakfast options or are bored eating same breakfast daily. You have to try this egg breakfast recipe.
Another go to breakfast option for those who are vegan is my Apple pie oats breakfast recipe, and this is so tempting and indulgent.
INGREDIENTS -
1 medium sized potato, grated
Half a carrot, grated
Seeds of your choice (Melon seed, Pumpkin seed)
2 tsp Oil for greasing the pan,
1 Egg
1 Cheese cube of choice, grated
Salt to taste
A pinch of black pepper
Roasted Cumin Powder
METHOD -
1. Mix the potato and carrot with salt, cumin, seeds, and pepper powder.
2. Grease a non-stick pan with oil and transfer the above mixture onto the pan, leveling it flat like a pancake. Simmer the gas and let it cook on one side by covering the pan.
3. After a minute or so flip this pancake and create a depression or a hole in the center (where you will crack an egg later) and allow it to cook on the other side as well for about a minute by covering the pan again.
4. Now crack an egg in the cavity you have made and spread the grated cheese just like that all over the pancake. Cover the pan again, switch the flame off and allow the egg to cook. If you like eating a runny sunny side up egg, then cook it accordingly. But I prefer my egg to be cooked well so I keep it covered for almost 2 minutes without opening the pan's lid to allow my egg to be cooked just well.
TIP- If your pancake breaks while flipping the first time don't worry. Bring everything together again, create a cavity in the center and cook on the other side. Once the pancake is crispy it will bind again and once you break an egg it will bring the pancake together.
Also, grease the pan well so that the potato, carrot or even the egg does not stick to the pan. Trust me if your pan is greased well everything comes together as a pancake.
