Lauki ke kebab | Glutenfreewhisk
Everybody hates the idea of eating lauki. One amazing way to enjoy this healthy vegetable is making kebab or tikki out of it. Although, I will prefer lauki ka halwa any day over anything savory but these kebabs or tikki are super easy to make and are super light and tasty. I have added carrots for extra fiber and am coating them in arrowroot powder to give these lauki fritters shape and a nice layer on the outside.
Talking about light and healthy vegetables many options will pop but lauki is one such vegetables that is made when you are sick as it has soothing nature and is light to digest. It is rich in water and helps in hydration as well and the best part is it cooks really fast. If you are not a lauki or bottle gourd fan, then try having it as lauki carrot fritters with cheese and you will love it. Another light and healthy vegetable is pumpkin and I absolutely love it. Especially the yellow, little sweet pumpkin and when you make it sweet and tangy way, it is unbeatable. Or make sweet pumpkin halwa out of it with jaggery and it is even better. And it turns out it is not just us or few generations before us. This thing of hating vegetables is from long before. That's why people have found ways to eat them as sweet because as it turns out there is cauliflower halwa famous in Kolkata, invented by Rabindranath Tagore. There is papaya halwa, tomato halwa, beetroot halwa and so much more vegetables unusually turned into sweet delights. Because everything sweet is always great to taste. Even mirchi ka halwa by Chef Harpal Singh is famous and served in his restaurant chains.
These lauki ke kebab or lauki ki tikki or lauki fritters are no less in healthy snack list, have it with your favorite chutney and they are like a complete meal as well. Have them in your wraps with other leafy goodness and your lunch or dinner is sorted. Or you can simply enjoy them during your tea-time with rain pouring down from the sky and your healthy snacking is sorted for the perfect monsoon days.

So, give yourself some time and make your own food because it is not difficult. You just have to be mindful enough as to what you are feeding your body.
I would also like to mention for all those who love super spicy food know that there is no taste bud for spicy on our tongue. Spices are killing your taste buds. And no, I will not eat or add spices for the sake of views because I don't consume chilies and I have never consumed them except for some occasional outside food once or twice a month. INGREDIENTS -
Around 15 cm or half a lauki (long), grated
1 big carrot, grated
Grated cheese of choice
Salt, to taste
2 tsp Roasted cumin powder
7 tbsp arrowroot powder
Oil, to shallow fry
1 big red onion, chopped
3 garlic gloves, chopped
Half a tsp black pepper powder
2 tsp roasted coriander powder
A pinch of salt
2 tsp oil
A dash of water
6 tbsp Rice flour
For garnish
Tomato ketchup
Garlic mayonnaise
Tulsi leaves
METHOD -
1. In a pan lightly dry roast the rice flour. You don't want to turn it brown just toast it to remove the raw flour taste. Set aside.
2. In the same pan, take 2 tsp of oil and roast chopped garlic and onion in it with a pinch of salt, black pepper powder and roasted coriander powder. Mix well and add a dash of water to prevent the masalas from burning and cook till onions are soft, and translucent. Set aside.
3. In a bowl take grated carrots, cheese of choice and grated lauki. Add the cooked onion garlic mix in it followed by roasted rice flour, salt to taste and roasted cumin powder. Mix well and form small kebab or tikkis out of the mixture and dip them in arrowroot flour and place them in a pan with oil to shallow fry them.
4. Serve hot with the choice of chutney and indulge. I am using tomato ketchup and garlic mayonnaise with some tulsi leaves.
Note - Add as much of red and green chilies and spices you prefer. I like my food to be simple, clean and tasty and I don't consume chilies.
