Cherry chocolate mousse with coconut | Glutenfreewhisk

Mousse that is creamy, chocolaty and so rich even when it has no heavy cream or milk. It is so simple and easy to fix with just fresh cherry fruit and other soul enriching ingredients that makes it a perfect recipe for your sweet craving. Also, this recipe is vegan as it has all plant based ingredients and is also lactose free. What I love the most about this recipe is the flavor of coconut with the chocolaty sweet taste. It just works so well on your taste buds that you keep on eating it.

Honestly, if you ask me, I thought this dessert will not work. But man, when this recipe worked and it formed a perfectly set mousse that was so chocolaty, so rich and cream that I couldn't stop myself in creating a high protein version of it. So, I used almost the same ingredients and make a high protein cherry smoothie as well. Because why not. When the combination of these ingredients works so well then, I have to make the most of them and having a sweet high protein breakfast is what a sweet lover craves the most. 

A lot of people these days are talking about whether they eat to live or live to eat. I don't know if I am late to this party because my feed has shown me a few reels on Instagram where people are choosing the latter. And I too fall in the same category, happily. Food and travel are two things that makes almost everyone happy and even after being allergic to so many food items I have paved a way to make the most of all the ingredients that I can enjoy and eat them with pleasure. I choose to mostly eat home cooked food because people still mock you for being intolerant to gluten or being allergic to peanuts as if it is something I have asked for. And there is so much adulteration everywhere people using maida in everything makes me not want to eat out. Also, I am not a street food person. I love trying new things my way, which is the best thing, I guess.

So, when cherry season is there my dad gets them almost immediately the previous batch in the refrigerator gets finished and I get to use it in so many recipes and especially for garnish (it is like the most elegant, safest and worth it garnish) that this fruit has become my new favorite. I always find is strange why the store-bought coconut milk so thick and has so much coconut flavor than the homemade one even when you are using the first batch and even reducing the water ratio. I am sure the store-bought coconut milk has artificial essence or things like that which makes it so strong in taste. I prefer homemade one as it is way frugal, additives and sugar free and easy. And this is the case with coconut water also; the store-bought ones are sweeter somehow. But for this recipe since I ordered coconut milk online, so I am using thick store-bought coconut milk. You can choose Urban platter unsweetened coconut milk or cocomagic coconut milk.

Making mousse without any heavy cream or milk that is completely vegan, lactose free and gluten-free makes you realize that people following plant-based diet or who have chosen to be vegan are actually really brave and lucky because they use coconut-based products almost daily and trust me when I say everything with coconut is the best. That why I love South Indian food so much because they too use coconut so beautifully giving it the credit it deserves. I try to use coconut in so many of my recipes and I am happy I get to share them with you as well. But turning vegan is difficult for me for now because I love chicken and I haven't given this a thought really, but you never know.

This is one of the easiest mousse desserts ever that is vegan and super indulgent.

P.S. my mousse was left to set in a refrigerator for 48 hours because I though this recipe will not work and I kind of forgot that I have left an amazing dessert in the refrigerator to set.


INGREDIENTS -


10-12 pitted cherries

2 tbsp unsweetened cocoa powder

Honey, to taste

A pinch of salt

3-4 tbsp desiccated coconut

20-30 ml coconut milk

1 whole cherry for garnish



METHOD - 



1. Take all the above-mentioned ingredients in a blender and blend to fine smooth paste. Pour in a serving glass and allow it to set in the refrigerator for 24 hours.



2. Garnish with a whole cherry and simply indulge.


Note - It will take time to set so be patient. You can even use thick homemade coconut milk. Adjust the sweetness according to taste and the sweetness of cherries.
