I have used muskmelon seeds that are rich in healthy fat, fiber, and some amount of protein. Also, I have added pomegranate seeds that are rich in antioxidants, micronutrients and is great for the natural glow on your face if added regularly on your diet.

And it is so simple to make this tangy salad with minimal ingredients that are mostly available in your homes. Tomatoes, cucumber, lemon, sugar, olive oil, mint and coriander leaves. Instead of diluting lemon with water, I have used cucumber juice as I have it handy, a leftover from past salad. But if you don't have it, you can skip it all together and it won't make any difference. Also, the overall salad recipe is quite flexible, and you can make various, additions, replacements are to your choice.

INGREDIENTS - 


1 chopped cucumber

2 tomatoes chopped

2 tsp juice of cucumber (optional)

1-2 tbsp olive oil

Juice of half a lemon

1 tbsp Muskmelon seeds (or any seed of your choice)

8-10 Roughly chopped mint leaves

Some roughly chopped coriander leaves

1 tbsp pomegranate seeds

2 tsp brown sugar

1 tsp salt


METHOD - 


1. In a glass bowl add olive oil, cucumber juice, lemon juice, salt and sugar and whisk well until the sugar dissolves.


2. Add the cucumber, tomatoes, muskmelon seeds, pomegranate seeds, mint and coriander leaves and mix well.


3. Serve cool in separate bowls garnishing with mint leaves and pomegranate seeds.


Note - You can use cherry tomatoes diced in half instead of regular tomatoes. I used red but small regular tomatoes as cherry tomatoes were not available around my place.
