Gluten-free sugar cookies recipe | Glutenfreewhisk
Whenever I bake cookies at home, they are mostly soft, gooey but this time I wanted to bake crispy sugar cookies for two reasons. First, I have to try the Japanese cheesecake recipe and for that I wanted gluten-free biscuits. The second that my mother always says that I never bake crunchy cookies. These sugar cookies solved both the requirements, and I love this recipe now.
The cookies came out to be so crispy that they are perfect for your tea & coffee and if you love dipping your biscuits in your hot beverage and then eat them. Then these gluten-free cookies are for you. I have added the flavor of green cardamom to these and I am using ghee instead of butter but if you want a dairy free or vegan version then you can add any plant-based butter of your choice. I would suggest coconut butter as green cardamom and coconut goes well and the creaminess and flavor that coconut add is an add on advantage. These sugar cookies are just the perfect fit for my two flavored Japanese cheesecake recipe.
While baking the consistency or the thickness of dough matters the most to get the results as you required. For my following recipe I wanted my cookies to have a snap, a crunch that can soak liquid. Thus, the amount of fat to be added is important and a tight cookie dough are important steps to keep in mind.
I have kept my recipe very simple even for people who do not have cookie cutter or mould to give their cookies some shapes. I have made round and almost square shape using a pizza cutter, but this can be achieved using a knife as well. I have flattened them using my hands and palm. And they turned out to be really good.
Don't let anything become an excuse to not treat yourself with some homemade sweet delights. Sometimes even when you don't have fancy equipment, baking is possible and the results are really great. All you have to do is have faith, passion and willingness to get the perfect result any which way.

Another favorite gluten free cookie recipe is Lemon cookies that I have baked with maize flour. These are so creamy naturally and so lemony that you will bake them again and again.
INGREDIENTS-
To make gluten-free sugar cookies
2 tbsp grounded oats (gluten free oats)
1 tbsp rice flour
1 tsp green cardamom powder
2 tbsp brown sugar
5 - 6 tsp melted ghee
1 tsp baking powder
1 and a half tsp baking soda
Water, as required
Some ghee to grease the baking tray
1 tsp sugar to sprinkle on top
MEHTOD -
1. To make sugar biscuit first preheat the oven at 180-degree Celsius. Grease 2 baking tray with ghee and set aside.
2. In a bowl add the powdered oats, rice flour, baking powder, baking soda, green cardamom powder, sugar and ghee. Mix it all up and gradually add a little water as required to make a tight dough.
3. Once done, flatten small rounds of dough using hands. Make sure you flatten it into a thin shape. I have made two shapes round & rectangular/square. To make square /rectangular one I have used a pizza cutter. You can use a knife as well.
4. Once arranged on a baking tray give the design of your liking. I have made marks on the edges using a fork. Sprinkle some brown sugar and bake them in a pre-heated oven for 15-18 minutes at 180 degrees.
5. Allow them to cool before transferring them.
6. Arrange them in a box or plate once cool and indulge.
Note - While make cookie or biscuit dough you can even add milk and replace the water with the choice of milk. If you want to make these biscuits dairy free replace ghee with any butter of your choice. You can try Butters and more coconut butter that is vegan, unsweetened and diabetic friendly.
