Lemon Cookies

Here is another simple yet mouth watering cookie recipe that just cannot be missed. Its refreshing, tangy and sweet. A perfect combination for the summers. I have baked these cookies in two variations just to give it a twist. Its summers and vitamin C seems to be really important for your body so why not in the form of cookies. I am using Maize flour with wheat flour to bake them, I know its summers and you will not get maize flour in this season but I had just half a cup of it left so in order not to spoil it I decided to use it in a good way. So even if you don't have maize flour just use the wheat flour.

Its an eggless recipe again and requires just few ingredients and only 10 minutes to bake. I got 7 cookies in total from this batter but I was really happy with the result. You can find it strange but I always add few drops of vanilla essence in every thing I bake. The smell is so alluring that I just can't skip it and it never disappoints me. One think I like about home baked cookies is their size as I always end up baking big cookies that I love to do. I am not using any cookie cutter. If you want you can use, of the desired shape you want.

These tangy sweet cookies are really amazing, and as orange and chocolate is an enjoyed combination, lemon and chocolate is also amazing. Bake and Indulge.

RECIPE:

INGREDIENTS:

For Simple Lemon Cookies
Half Cup Maize Flour
One Cup Wheat Flour
Juice of 1 Large Lemon
3 Spoon Ghee
1 tsp Baking Soda
Few Drops of Vanilla Essense
3 tbsp Powdered Sugar
Water as required to Knead Dough
To decorate, Table Sugar Crystals

For Chocolate Filled Lemon Cookies
Handful of Dark Chocolate Chips

METHOD:

  • Preheat the oven at 180-190 degree C. Grease a baking tray with ghee,oil, butter, any one you like.
  • In a bowl take all the ingredients (except the sugar crystals to decorate and the chocolate chips) and make a nice dough with it. Add water carefully, do not make the dough too loose or to tight. 
  • For Simple Lemon Cookies, Use your fingers and palm to make the cookie size of your choice. I have made big-thin cookies. as the baking soda helps them to rise while baking. Don't make them too thin as they will bake fast and will become crisp.
  • Decorate them with table sugar crystals and arrange them in the baking tray with space between them.
  • For the Chocolate Filled Lemon Cookies, Take balls of dough and spread it making a basket like you do for "momo" or "paratha" or "kachori" then add/fill some chocolate chips inside the well/basket, bring the side together sealing the ends, make a ball again using hands, flatten it lightly, seal the edges with fingers if any appears. Arrange them in the baking tray.
  • Bake them for 8-10 minutes. Allow them to cool on a rack and enjoy.
Note: Maize flour becomes difficult to handle sometimes and will break/ crack while handling. But it is controllable.
Add 1 tsp lemon zest/rind in the batter. I don't like it personally but you can totally add it.
