If you follow a gluten-free diet, and you are feeling like you are missing a trend that is, you feel kind of FOMO because you cannot have the viral Japanese cheesecake that everyone is trying these days with just a few ingredients then worry not. Because I am giving you the best gluten-free viral Japanese cheesecake recipe that is just perfect and you will be a part of the viral social media trend. And I don't just have one version of it, I have two versions of gluten-free Japanese cheesecake and they are scrumptious.

I bake cookies regularly but for this recipe thin, crunchy cookies are the best. The reason thin cookies or biscuit that have a crunch are used so that they absorb the coffee concoction well and become soggy that makes this Japanese cheesecake so tempting. As a kid I have enjoyed eating warm milk with roughly torn pieces of bread for breakfast. This reminds me of that, but this recipe is 10 steps ahead in terms of flavors.

So, I am using flavored yogurt. My go to yogurt especially their flavored ones. I have used two in this recipe. One is Mishti Doi and the other is mixed berries. I have baked my own crispy gluten-free sugar cookies in just 15-18 minutes and have used instant coffee to dip my biscuits in. This is so easy recipe that if you have not joined the trend yet then you have to.

The reason I am using flavored yogurt and not the plain one because when you make a dessert you will want it to be sweet and since I have not added any sugar in my coffee concoction so using that much sweetness of flavored yogurt seems plausible for my taste buds.

I think, this Japanese cheesecake is getting so viral because it is an easy craving fix and you can play with flavors. Be it the flavor of biscuit or yogurt or have a topping like salted caramel or dust some cocoa powder. The choice is yours. You can make so many versions.

Its like having a quick version of tiramisu but with a twist. My version of Japanese cheesecake is with an Indian twist of using Mishti Doi flavor. One of the most tempting and satisfying Indian dessert.

It is very difficult to choose between these two flavors of Japanese cheesecake that I am trying today. Mishti Doi Japanese cheesecake is just a little (just a tiny bit) more tempting than the mixed berries Japanese cheesecake for me. It is very difficult to choose but I think the combination of mishti doi with green cardamom and coffee just makes it a tiny bit better.


INGREDIENTS - 


Gluten-free sugar cookies or biscuit 

1 small Mishti Doi yogurt

1 small Mixed berries yogurt

2 tsp coffee with lukewarm water concoction

Tulsi leaves for garnish

Unsweetened cocoa powder for garnish



To arrange the viral Japanese cheesecake


1. Make a concoction of instant coffee and lukewarm water. Add water to your liking. I love my coffee to be strong, so I have added water according to my liking. Also, I am adding a little concoction to my mishti doi yogurt as mentioned in the next step, so I am making the quantity accordingly.


2. Take each of the yogurt mentioned above in a glass serving dish of choice. I have whipped both the yogurts first lightly using a spoon. Pour the mixed berries yogurt in one after whipping it lightly to bring it to an even consistency.


3. Add 1 tsp coffee concoction to the mishti doi yogurt and then mix it to bring it to a smooth even consistency and pour in the serving dish.


4. Now depending upon the depth of your serving bowl take the biscuit piece or whole biscuit and dip it in the coffee concoction and arrange them on the yogurt.


5. Once all the space is covered. Keep them in refrigerator for a few hours. 


6. Serve chill by dusting half of the top with some unsweetened cocoa powder and indulge.
