Tiramisu or Pick Me Up
A very beautiful and super tempting dessert of the week is TIRAMISU, an Italian wonder which means Pick Me Up or Cheer Me Up. This dessert is so simple and quick that you will want to make it and enjoy it all by yourself just to cheer you up😉😉. It is a must try recipe which starts with the preparation of biscuit that are called Savoiardi or Lady Finger that are crisp and light which are made juicy and spongy by dipping them in coffee liquor topped with creamy richness of mascarpone.
The Italian version of Tiramisu consists of eggs but forgive me because I have used egg only to make biscuit and not in the cream-mascarpone mix. So I am sharing the eggless version of Tiramisu (the egg only being in the biscuit). The eggless version does not make it any less tempting so don't worry and head to your kitchen and just give it a try and yes thank me later because the recipe will surely make you cheered up.

Ingredients:
For Ladyfingers:
2 Eggs, Seperated
60 gms Flour
50 gms Sugar
1 tsp Vanilla Essence (Optional)
Pinch of Baking Powder
Half Tsp Baking Soda
For Coffee Liquor:
2 Spoonful Instant Coffee
2 Spoonful Sugar
Half Cup Water
20 ml Dark Rum
For Topping:
200 gms Macarpone Cheese
100 ml Cream
20 gms Powdered Sugar
10 ml Dark Rum (Optional)
For Garnish:
Cocoa Powder
Chocolate vermicelli
Method:
Note: If you cannot get the mascarpone cheese in your city then you can use cream cheese instead of it.

Method:
- Beat the egg whites with sugar with a electric beater or a hand whisker, adding little sugar at a time. Once its white and fluffy add the egg yolks and vanilla and whisk again until mixed well. Add the flour, baking powder and soda and fold the mixture slowly using a spatula.
- Once mixed well pour the content in a piping bag and pipe out the biscuits on a greased baking mat or plate and bake for 7-8 minutes at 170 C.
- The size of biscuits depends on how you want to serve the dish and in which bowl. Basically they are around 5-6 cms long and a half or less inch broad.
- In the mean time, prepare the coffee liquor by heating the water add it over your coffee and sugar mix. Allow it to cool a bit then add the Rum.
- In another bowl whisk the cream with sugar with an electric beater until soft, fold in the mascarpone cheese and rum. Mix well.
- To assemble, dip the biscuits in the coffee liquor, carefully place it on your serving dish making a layer at the bottom. Top it with a nice layer of the cream and cheese mix. Repeat the layer once more and garnish with cocoa powder and chocolate vermicelli. Serve cool.
