Overnight oats are really the best and fibrous breakfast that one can indulge in. So many variations and a satisfied morning. You will never skip breakfast as you can prepare them prior and just grab them and run for work. No skipping breakfast, no excuses when you have such good overnight oats breakfast recipes that you can eat on repeat.

With strawberries and persimmon in season I decided to use both the fruits and incorporate them as puree. This not only adds sugar but also make the recipe more balanced and healthier. Starting you day with fruits is generally recommended for individuals who do not suffer from diabetes as feeding your body with vitamins, minerals and fiber that fruits can provide is like a blessing for the body. Not the forget the glucose kick in the morning. But there is time constraint for many as mornings are usually rushed that leaves no time to look after your body. This overnight oats with fresh fruits recipe will make you have your breakfast and fruits as well. A must try breakfast recipe idea that is naturally gluten-free, and dairy free.

A lot of people don't enjoy or can have curd or milk due to intolerances. So, the creaminess that you get in my recipe is from the desiccated coconut and trust me as these overnight oats are an absolute magic. Always keeping desiccated coconut in your pantry. It is a MUST. This is a magical ingredient, and it can be added to both sweet and savory dishes when you are looking for flavor, creaminess, natural oils, and fiber.

Pairing fruits with milk and curd is a controversial topic. In Indian cuisine we have been doing it forever making mango lassi, banana shakes, custard apple kheer and many more are enjoyed in every home. But there are certain fruits that should be totally avoided with curd or milk like pineapples, watermelon, oranges should be avoided totally.

Persimmon is a great fruit with so many health benefits and nutrients that adding it to your diet when in season seems correct. It tastes like honey and has a crunch like apple. Such a great fruit. And when it sets in fridge overnight like in this recipe it sets like a jelly naturally. So, while making a persimmon puree be careful not to add too much of water. Make it nice and thick.

The strawberries that I have used were sweet and sour thus both the glasses have really different taste, and these are not overly sweet. They are apt to my liking. A perfect overnight oat recipe for gluten free breakfast idea that is sweet, healthy and indulgent.

INGREDIENTS - 


1 cup rolled oats

2 tbsp chia seeds

1 tbsp desiccated coconut

A dash of honey

1 tsp cinnamon powder

Water, around half a glass

Fresh strawberry puree

Fresh persimmon puree

Chocolate spread, for garnish

Melon seeds, for garnish


METHOD - 


1. Blend oats, chia seeds, desiccated coconut, cinnamon powder and honey with water to make a thick consistency paste.


2. In a glass add the layer of persimmon puree followed by the above blended oats. repeat this process twice or until your glass capacity is reached.


3. Similarly repeat the process with strawberry puree followed by oats puree and repeat it.


4. Finally top the glasses with chocolate spread and some melon seeds.


5. Refrigerate then overnight and indulge in the best overnight oats without milk or curd recipe.


Note - I have kept my strawberry puree a bit chunky and my persimmon puree smooth and nice. You can choose the seasonal fruits or fruits to your liking. Also, make sure you adjust the sweetness as per your liking. I have added only a dash of honey and have liked the natural sweetness from the fruits.
