You scream, I scream, we all scream for Ice cream. 

Ice creams are the best dessert ever. And even in the cold winter nights, craving for something sweet and specifically an ice cream is another level of crazy.

Since, I can eat an Ice cream daily I have to find an alternative that is healthy and guilt free. So try this guilt free, lactose free ice cream that will make you satisfy your cravings and won't affect your health also.


Lactose free chocolate coffee ice cream

Watching so many mousse recipe on Instagram where chocolate mousse is made from cooked rice, paneer, avocado and apple. I decided to go with apple mousse recipe with my twist and make it into an ice cream.

My recipe of guilt free ice cream that includes apple, honey, coffee, cinnamon and dark cocoa powder.

Here is the recipe of chocolate coffee lactose free ice cream.

For my recipe today I am using silicon ice cream moulds. I did the mistake of using 8 mould and carrying it to the freezer was a challenge as I don't have that big of a tray or a plate to carry a set of 8 ice cream mould and with that liquid in it was messy. I will recommend that you use Moldberry 4 cavity silicon ice cream mould. It will be easy to carry it and convenient than the 8 cavity one.


INGREDIENTS - 


1 medium sized peeled and chopped apple

1 tsp cinnamon powder

Honey as per taste

2 and half tsp Cocoa powder 

1 tsp instant coffee 

Chopped almonds and chocolate chips for decoration

Melted dark chocolate for external chocolate layer.


METHOD - 


1. In a pan add some water and add cinnamon powder and chopped apples. Cook them for 10-12 minutes or until soft. Allow it to cool a bit and grind them in a blender to form a smooth paste.


2. To this paste add cocoa powder, honey, coffee and mix well.


3. Pour this semi thick mixture into ice cream moulds and allow it to set overnight in the refrigerator or at least 6-8 hours.


4. Melt the dark chocolate. Coat each ice cream with a thick layer of chocolate and decorate with chopped almonds and chocolate chips.


5. Refrigerate for 15-20 minutes more to make it set well. Enjoy the super healthy lactose free ice cream.
