A super food, a pseudo cereal Quinoa is in everyone's meal now a days. So, skipping the savory version I am sharing a sweet recipe, obviously. This crunchy quinoa chocolate recipe is so simple and there is no added sugar than the sugar available in the dark chocolate that I have used (55%). I have roasted the quinoa in the oven, but you can choose to roast them in a pan as well. This quinoa chocolate recipe is very simple, and you can even make them and use them as diwali gift options. I am sharing this recipe during the valentine's week because valentines make February a month to indulge in sweets. A perfect gift option idea as well for valentine's day.
I have used a silicon mould to shape my quinoa chocolate majorly and for the remaining mixture I have set it on a cling film as a bar, and this too turned out to be quite well. If you don't have silicon or any other chocolate mould then make quinoa chocolate bars, they are equally tasty and they shape really well. So, I am showing you both the versions crunchy quinoa bars and just crunchy quinoa chocolate shaped in floral mould.
For some this recipe can feel way to crunchy so if you are not a crunchy chocolate fan then you can even use quinoa puffs as they will be softer and will give you the goodness of quinoa. Quinoa benefits are many from being high in protein and fiber to being rich in antioxidants and nutrients like Magnesium, Iron, phosphorus and many others. For people on their weight loss journey or who are struggling to control their blood sugar levels adding quinoa to your diet will do wonders.

For my crunchy quinoa chocolate, I have used ghee and dark chocolate combination with cinnamon and roasted quinoa, and it is just so easy to make this crunchy quinoa chocolate but all you want is patience with these few ingredients' recipe. As these will take overnight to set well in refrigerator and then you can indulge.
If you haven't added quinoa to your diet yet, then this is the sign. You can use this ingredient in so many ways and use it equally in both sweet and savory recipes. Make salads, cakes, wraps, desserts and you will get all the fiber and other benefits of quinoa that your body desires.

INGREDIENTS -
90 gm dark chocolate
4 tsp ghee
1 cup quinoa, washed
2 tsp cinnamon powder
A little ghee to grease the mould and baking tray to roast quinoa
METHOD -
1. In a greased baking tray, spread the washed quinoa evenly. Make sure you are draining as much water as you can so that it roasted quickly. Once spread evenly, dust the cinnamon powder over it and bake in a pre-heated oven at 180-degree Celsius for 30-35 minutes.
2. Once roasted, set aside and let it cool. In the meantime, melt the dark chocolate and ghee. You can use a double boiler or a microwave oven.
3. Now combine the chocolate ghee mix with the roasted quinoa. Add this mix in greased moulds. Tap the mould to let it all settle and release if any air bubble is inside.
4. Spread the left-over mixture on to a cling wrap and neatly shape it as a bar and fold the wrap to allow it to set.
5. Refrigerate both overnight.
6. Demould the set crunchy quinoa chocolate and cut the crunchy quinoa bar in the preferred shape and indulge.
Note - Nake sure you are using good quality quinoa. You can even soak the quinoa over night after washing it and then bake it. This will make the crunchy chocolate a little less crunchy if you prefer it that way. To make this gluten-free recipe vegan use vegan dark chocolate and vegan butter instead of ghee.
