Shahtoot Malai Recipe | Glutenfreewhisk

 This recipe is a Hyderabadi delicacy that is made during weddings and the richness of this explains why. This recipe is so easy, quick, delicious and indulgent that you will not stop and keep on eating it because it is that good. Mulberry cream dessert or Hyderabadi shahtoot malai is one of the best recipes that I have made this year so far.

The recipe requires everything milk in it. Like cream, milk powder, malai, condensed milk, and khoya. But I never prefer eating khoya, the sole reason is the store bought khoya is highly dirty, adulterated and the thought of using it gives me chills. In my malai shahtoot recipe I have totally skipped khoya. Also, I have reduced the amount of milk powder to minimal and have replaced it with roasted makhana or foxnut. I have dry roasted them in a pan and they are a really good addition in the recipe because it provides an add on taste as well texture that I personally feel is way better than using milk powder. I was searching for alternatives but couldn't find any and I finally decided to go ahead with foxnut or makahana just like that. And another addition that I did is I have added some fresh vanilla seeds and OH MY GOD it tastes heavenly. Finally, I added some Greek yogurt to make it equally rich and the missing khoya does not hamper the tatse or quality.

As I have mentioned that I was looking for alternatives for milk powder, I came across so vegan alternative to make this recipe vegan. For that you can use everything coconut and make this vanilla malai shahtoot coconut malai shahtoot. To make vegan malai shahtoot replace regular cream with coconut milk or coconut cream, replace milk powder with coconut powder, regular condensed milk with coconut sweetened condensed milk, regular malai with coconut malai and skip khoya all together. You will make yourself one of the best festive Hyderabadi vegan malai shahtoot and you will thank me later.

After having just one single bite I was transported to some heavenly place, this is that good. A proper bite should have everything together especially the almonds. They are the best addition. You can add any nut of choice but trust me almond makes this even better. 

Shahtoot or Mulberry is a seasonal fruit that comes for a very short duration. The ripe fruit is super sweet, rich in water and high in vitamin C, antioxidants, iron and fiber. This tiny gem works magic for your body. It controls blood sugar, improves digestion and reduces inflammation. Mulberry desserts are one of the best ways to eat them as this tiny fruit satisfy your sweet craving and does not impact your blood sugar too much. I am sharing three mulberry or shahtoot recipes making the most of it. This Hyderabadi malai shahtoot recipe is the first recipe. The next is the viral coconut coffee and I am making my coconut coffee with mashed mulberry. And obviously, overnight oats with mulberry is the third tempting mulberry recipe. Because I am making the most of it, so I am having mulberry the moment I wake up till my dessert.

For vegan malai shahtoot you can use Urban platter sweetened condensed milk that is plant based and lactose and soy free. Cocomagic coconut milk powder and Urban platter unsweetened coconut milk. You will make yourself the best vegan malai shahtoot recipe and enjoy the Indian desserts to the fullest.


INGREDIENTS -


Half a cup mulberry or shahtoot

4 tbsp malai

125 ml fresh cream

Condensed milk, as per taste

2 tsp milk powder

8-9 dry roasted makhana or foxnut, powdered

Handful of chopped almonds

2 tbsp natural Greek yogurt 



METHOD - 



1. In a bowl whisk cream, yogurt, and 1 tbsp malai. Once done whisk condensed milk, milk powder and roasted makhana powder.



2. Once combined. Set aside.



3. Now puree mulberry or shahtoot to a semi fine paste and mix it with the rest of the malai to get a beautiful purple shade mixture. Set aside.



4. Now scrape out vanilla seeds from 1 small vanilla bean and add it to the cream mix. Whisk until combined.



5. Now assemble the Hyderabadi mulberry cream dessert. In a serving dish add half of the cream mix followed by the mulberry malai paste. Repeat another layer of cream mix and finally decorate with purple malai mulberry mix as you like.



6. Garnish with whole mulberries, chopped almonds and an organic rose flour. Serve chilled and indulge in this Hyderabadi delicacy.



Note - I am making a small batch serving 4 people but if you want to make a big batch because this Indian dessert is worth a big batch just double the ingredients and indulge.
