Gluten free sticky date pudding with syrup | Glutenfreewhisk

I absolutely love this recipe and if you are looking for an egg-free and gluten-free sticky date pudding recipe then you have to try this. Simple ingredients available at your home specially in winters like red carrots, fresh oranges or kinu/kinnow (a high yield mandarin hybrid) something that I have used in this delicious recipe. The spices like cinnamon, cloves and ginger powder that goes so well with the dates that this sticky date cake recipe will become your go to winter specials obviously after gluten free plum cake

Easy sticky date pudding recipe with carrots and orange which is moist, gooey and just so scrumptious. Since I have not added egg in this recipe thus adding some condensed milk is a must to give the cake that body. So, while adding dates be careful if you are not following my recipe and making a big batch. My recipe is enough for a 8-10 small ramekins that I have used. You can get these microwave and dishwasher safe ramekins from Clay Craft. Their ceramic ramekin bowls are amazing to bake individual pudding and serve them just like that in these ramekins itself.

Like I have mentioned earlier whenever I bake a cake, I use ghee but if you want a dairy free version with this gluten free recipe then use any nut butter or vegan butter of your choice. Make sure it does not have a strong flavor or taste of its own as it can mingle with the flavors of cake. You can also opt for olive oil as it is neutral. My whole wheat date pudding recipe follows the water bath method to bake it but for my gluten-free date pudding recipe I have decided not to use a water bath and bake it just like that. Even without a water bath this recipe will give you a gooey, sticky texture that you will be expecting. INGREDIENTS


For the cake


8-10 pitted dates, soaked in warm water

1 cup gluten free rolled oats, powdered

Half cup rice flour

2 tbsp condensed milk 

1 medium carrot, grated

Juice of half or 1 orange/ kinnow

1 tsp clove powder

2 tsp cinnamon powder

2 tsp dried ginger powder

half a tsp salt

2 tsp baking soda

1 tsp baking powder

4 tbsp hot water

2 tbsp ghee or vegan butter

Honey, to pour at the bottom of ramekins (around a few tsp for each ramekin)


For the syrup


1 cup water

2 tbsp honey

Some chopped dates

1 tsp ginger powder


METHOD-


1. Pre-heat the oven at 180 degrees Celsius. Grease the ramekins with ghee or vegan butter and set aside.


2. In a bowl add the powdered oats, rice flour, grated carrots, brown sugar, cinnamon powder, ginger powder, crushed cloves,salt, baking powder, and baking soda. Now add the orange juice. Puree of pitted dates that were soaked in warm water and mix lightly.


3. To adjust the consistency, add warm water if needed. Check the sweetness and add condensed milk accordingly. Give the batter a final mix.


4. In the greased ramekins add around a few teaspoons of honey (just enough so that it covers the bottom and forms a thin layer). Now pour the batter. Don't fill them till the brim as the cake will rise.


5. Bake them in the preheated oven at 200 degrees Celsius for 10 minutes then at 180 degrees Celsius for 20 minutes or until the skewer comes out clean.


6. Once baked, cool them on a cooling rack. In the meantime make a date honey syrup that goes really well with the cake.


7. In a pan add water, ginger powder, honey and cook it till it starts to get thick. Now add chopped dates and continue to cook till the syrup or the sauce has reduced and thickened.


8. Demould the cake or pudding on individual serving dishes and pour the hot date and honey syrup over it generously.


9. Garnish with chopped dates and serve immediately.


Note: Since the date pudding recipe is egg-free make sure you are adding condensed milk in the recipe like I have. So do not add a lot of date puree as the pudding/ cake will become oversweet because there is a syrup as well to serve the pudding with.
