Date Pudding

When we think of Winters, what are the things that comes to your mind?? For me its the beautiful colorful flowers and lovely fruits and vegetables So I am celebrating winters with this amazing Sticky Date Pudding that is so yum that you will want to make it and enjoy it again and again. Although winters is not my favorite season but again it has these amazing elements attached to it that I can't complain.

Date are really healthy and has so many nutritional value that you have to include them in your diet and that irresistible taste and sweetness pulls you towards them so try this amazing pudding and see for yourself.

I am using these fleshy "Medjool Variety of dates" as these are my favorite and is very fleshy that is perfect for my pudding. I recently have explored a lot of varieties of dates and these become my favorite so I found them just right for my recipe. Else you can choose any date as per your liking and availability. So bake and indulge.

INGREDIENTS:

14-15 Dates, deseeded
1 tbsp Honey
2 Eggs, seperated
3-4 tbsp Wheat Flour
A pinch of Baking Soda
2 tsp Vanilla essense
Water to soak the dates

METHOD:
  • Pre - Heat the oven at 180 C. Grease your small ramekins with butter and then apply a thin layer of honey in them. Set aside.
  • Soak in the dates in water and bring it to a boil. Allow it to cool and grind them to a fine paste.
  • In a bowl add the egg whites and beat them using an electric beater till peaks are formed.
  • In another bowl whisk the egg yolks and vanilla essense.
  • Add honey to the date paste, then add the egg yolks vanilla mix, flour and baking soda. Mix.
  • Fold in the egg whites into the above mixture. Divide it in individual ramekins not touching the brim and cover the ramekins with the aluminum foil.
  • Place these ramekins in a tray with hot water and place the tray in oven.
  • Allow it to cook for 1 hour. Let them cool completely, uncover the foil, run the knife around the edge of the dish and demould the individual pudding in a plate. Serve cool pudding with some honey or just like that.
Note: Dates themselves are very sweet so you can avoid adding honey to the batter or can serve the pudding with some yogurt instead of honey.
